This is my favorite dish of all time and, at age 71, I've tried most of 'em. Never had it with scallions but I'll bet that's a great addition. When I make Tom Ka Kai for others, I leave the chilis out entirely. It's easy enough to add them to my own serving, and I like it fiery hot! Lovely video production, BTW. All those greens. Puts one right in the mood.

My copy of the recipe! TOM KHA GAI | COCONUT CHICKEN SOUP INGREDIENTS **Please adjust flavors to your liking. Should be savory, followed by slight sour and subtle sweetness. Also, please follow video for the order in which to add these ingredients. It does matter. • Water - 3 cups • Coconut Milk - 2.5 cups • Chicken Thighs - 1.5 lb (680 g) • Oyster Mushroom - 1.5 cup before shredded • Straw Mushroom - 1 cup (or any other kind of Asian variety, EXCEPT Shiitake) • Galangal - 4.5 inch knob • Lemongrass - 3 stalks (lower half) • Kaffir Lime Leaves - 12 leaves (separated) • Red Chilis - as much as you'd like • Fried Dried Red Chilis - as much as you'd like • Salt - 1 tsp • Fish Sauce - 5 tbsp • Sugar - 2 tsp • Tamarind Concentrate - 1 tbsp • Lime Juice - 2 tbsp (see video for tips on when to add this) • Scallion - 2 to 3 stalks • Culantro/Sawtooth Coriander - 1 handful • Cilantro - 1 handful Directions 1. Crush lemongrass stalks (lower portion only) 2. Thinly slice galangal 3. Tear lime leaves 4. Smash shallots 5. Chop green onions, red chilies, culantro and cilantro 6. Heat wok, add oil, fry chillies until red. Do not burn 7. Straw mushrooms and oyster mushrooms cut into bite sized pieces 8. Cut chicken into bite sized pieces 9. Heat water in wok, boil with galangal, lemongrass and 2/3 of lime leaves. Gently boil 10. Add chicken thighs and salt 11. Skim 12. Add tamarind concentrate and shallots. Boil until chicken almost cooked 13. Add coconut milk and reduce heat to medium low 14. Add mushrooms 15. Season with fish sauce and add sugar 16. Add fresh and fried chillies 17. Add lime leaves, scallions, culantro and cilantro and lime juice and rest of lime leaves 18. Turn off heat, adjust flavors as necessary 19. Serve over top of warm jasmine rice
