Delicious Vegan broccoli cheddar soup!

I made this last night with a few additions of my own and used unsweetened coconut yogurt and it was delicious! I ate it with a French baguette. If you don't have yogurt, full fat canned coconut milk has the consistency of a heavy cream which would work as well. You don't taste the coconut at all. The soup is great and I highly recommend it!

If anyone is cal counting just the big things. It looked about 4tbs of butter 400 calories 8 oz/1 cup unsweetened cashew yogurt 165 calories 7.1 oz Daiya cheese 560 calories Veggies are not a lot maybe like 150 calories Which makes about 1,675 for the whole pot. If you divide that into however many servings it is as guessing could be 4-8? Not sure exactly. That would make it 419 calories for 1/4th of the pot or 279 calories for 1/6th or 209 calories for 1/8th Please correct me if I'm wrong but it's a very good soup! I'm excited to try it. Thank you.

Im actually on here looking for the mac and cheese video again. I made it a little while ago . i made a couple changes to it , i used fresh garlic instead of garlic herb seasoning and also added a sweet potatoe. it turned out so good. It was almost too cheesy. Funny thing is im looking for it again because i feel like it would be delicious adapted to make a cheesy broccoli soup or used as a cheese sauce over steamed broccoli and cauliflower. But this version also looks delicious 😋.
