This is a delicious & easy vegan lemon cake recipe for beginners! Can be a yummy birthday cake too! The recipe is by Nigella Lawson and OMG it's so good!! It's super moist, coconuty, fluffy and cruelty free! You NEED to make this!

Ingredients
Cake
Dry ingredients:
2 cups (240g) All-Purpose Flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Wet Ingredients:
2/3 cup vegetable oil
3/4 cup (150g) white sugar
1 cup plus 2 tbsp coconut milk just the cream. I'm using the brand Biona.
zest of 2 lemons
3 tablespoons fresh lemon juice
1 tsp vanilla extract
Combine the dry ingredients to a bowl and whisk until smooth and no lumps. Set aside. To a clean bowl combine the wet ingredients making sure that its smooth and creamy. Now pour the wet ingredients into the dry and mix just until combined. Place in a 9 inch baking tray lined with parchment paper and bake at 180 degrees Celsius for 30 min.

@@sulma8339 LEMON CAKE-VEGAN ------------------------------------------------------------ DRY: WET: TOPPING: 225g plain flour 1 can Coconut cream Vanilla yogurt 1+1/2 tsp baking powder 150g caster sugar Pomegranate jam 1/2 tsp baking soda 115 ml veggie oil 1/4 tsp salt A splash of Vanilla extract Zest of 2 lemons Juice of 1 lemon 1) Chill a can of Coconut cream, overnight. 2) Mix all dry ingredients. 3) Mix all wet ingredients. 4) Pour wet mix into dry and mix. 5) Pour mix in tin and bake at 180 C for 30m. 6)Let cool completely, cover with yogurt and top with jam.

I made this and it came out delicious! I had to add another cup of oat milk as it was too thick but it was still wonderful, thank you for this recipe!

I made it today, but with 1 whole lemon Juice and without Baking Soda since I don't have at home. But the taste is wonderful. Can you tell me what could be the difference with or without baking Soda?

I like when you say "... nice and delicious... Trust Me." I dunno it just tickles me haha. I made the cake and it turned out terrible. It was so oily, only to realise instead of measuring 150ml I did 150g. I did think it seemed like a lot of oil haha. I'll give it another go. haha. Great video and cake.

Did you use a 8" or 9" cake tin? I see that Nigella used an 8" is it fine if I use a 9"?

I have never tried using other types of flour. It might make the batter too thick but you could adjust it with some liquid. Give it a try and let me know how it goes!

could I substitute the vegetable oil worth vegan butter ?

Hey, Sarah! I haven't tried it with butter but I don't think that would be a problem. It may have a different texture and flavor depending on the butter you use. I would say to stick with the recipe at least the first time so you have something to compare it to when you use butter. Enjoy it! ❤️❤️❤️

The recipe could be much better with another sugar, sugar is the worse thing you can eat, vegan cake should be with rice siroup or coconut sugar...anyway thaks very much for sharing this nice cake
