This recipe intrigued me and finally got to cooking it. My impressions, 1. I don't remember ever using a rolling pin on a steak, 2. texture is spot on, 3. while I would not mistake it for a meat, it tastes very nice, so all in all it was a success.

Just Wow! I have to be honest. I was very skeptical. I’ve had so many vital wheat gluten steaks in the past, and they’ve all been not great. So I only made half a batch because I hate wasting food. For anyone trying this recipe, it's great, but I'd suggest that instead of just flattening the dough pieces you first roll each piece into a long sausage shape, then twist it a little and tie it in a simple knot. You'll have little pretzel-looking bits of dough - then flatten these out and proceed as they say. This arranges the gluten in long strands just like meat and gives a much more steak-like texture!

I made this, and it's brilliant. Vital gluten wheat lives up to its name. A few things I'd change for next time: Use less tamari sauce in the marinade, perhaps swap for BBQ sauce -- it was very salty. Also, might be worth cooking them in the oven a bit to cook them through (still wrapped in foil) in the middle before frying them on the pan.

Forget the gluten! Oat flour and chia meal will hold it together, and remember to add lots of different chopped veggies for flavor and texture! Don't want the grease? Cook it in the microwave. I've never cooked my veggie burgers or veggie steaks in a pan with grease.

When they cut the steak, there was an edit where they coated the inside of the cut with marinade. I've seen this made by someone else using their recipe and the marinade was not inside like this video shows. I call shenanigans.

Parchment/greaseproof paper should work fine, works for most things. An extra tip: scrunching up the paper first makes it easier to work with. 😉 Bon apetit 👨🍳😙👌🍽

Mine didn't come out juicy. Before I had each one I steamed it and left it in the marinade for 5-10 mins on each side. It gave it a great flavor on the outside but not juicy like the picture on the inside. I think next time I will add more vegetable broth for a less dense seitan, double the steaming time, and substitute the maple syrup for Worcestershire sauce (It was too sweet for me). Not sure why you need foil so I might nix that and use parchment paper if they are stacked on top of each other. They tasted great even dry. Great recipe fed me well all week. Any tips on getting them to be juicier?

Harley Quinn A little hint.......either knead by hand longer, or if you have a stand mixer, knead the seitan with the dough hook until you see strands, and the seitan gets warm and smooth. If you don't have a stand mixer, but you have maybe a Ninja, knead the seitan in that processor bowl, same amount of time, same results. I will tell you if you have the Ninja, you might see the seitan turn crumbly. Don't worry. Let it keep going. The seitan will come back together. The end result after cooking is real steak look, with the same texture as steak.

Kat Jat Give the recipe a try. I'm about to make this recipe, but I have made others that taste like steak. If you make this, and you have a stand mixer, knead the seitan for about 10-15 minutes, until you see strands, and the seitan is warm, smooth, and shiny. It's done then. If you don't have a stand mixer, but you have maybe a Ninja, knead seitan same amount of time, with the same results. This kneading will make the steak look like real steak after it is cooked.

I think you could probably use one of those and add in a tsp of psyllium husk, because when liquid and psyllium mix it forms a gluten-like texture that can be kneaded.

You can also just poach it in broth on the stovetop or in the oven. Even a crock pot will work (it'll just take a very long time)

I know this is quite old now but here is my take on this recipe(disclaimer I am neither vegan or vegetarian I just try to eat healthy and cut down on meat).I thought the texture was quite dense/firm and rather chewy ( my wife said rubbery and only managed one mouthful) taste was ok slightly smokey from the paprika and I also added a dash of liquid smoke to the marinade. I managed to eat the whole steaklet(a slavering of mustard mayo helped) but I will not be bothering to do this again I will just treat myself to a proper piece of ribeye every now and then. ps as I am writing this 10 minutes later I can taste a faint yeasty flavour in the back of my mouth.
