They are extremely interesting! I'm not vegan but I *have* added meat substitutes to my diet. I enjoy tofu, etc at times that I would have otherwise eaten animal meat. I know it's not enough for some people but hey, better than nothing. And if everyone did it, it would probably make a dent in the meat industry, saving some lives at least.

I would really recommend squeezing the jackfruit in a kitchen towel to get as much water/brine out as possible - acts almost like a new ingredient and soaks up all the marinades so much better!

@@reemohooper2803 you're wrong it's not even the same type of meat. Gyros is pork meat and wrapped in a pita with fries and tzatziki maybe onions. Döner/kebab is usually wrapped in a thinner type of bread and is usually spicy with other ingredients. They're both completely different foods so stop being salty.

Wow! The recipe seems great, but I appreciate you explaining about why you used the black vinegar, explaining what flavour you were going for. It helps so much when we might not have the exact ingredients, but we want to try this. I live in rural Croatia where nobody but me is vegan, and I have ingredients to make this or a version that is very similar. (If anyone else in Croatia is watching: DM sells jackfruit. The mushroom powder he uses is not available here, but there certainly are dry mushrooms available. Grind and use in the recipe.

@sauce stache tried this one again. Blended up an onion to mix in this time which gave it a meatloaf taste. I boiled away my jus by mistake and had to remake with your seasonings and half cup water and half cup ketchup. Was tasty.

Sometimes I'll lightly roast the jackfruit fibres and that helps with texture, makes it a bit tougher and you can even get some burnt tips depending on how far you want to take it. It's a crazy ingredient. Edit: I wonder how it would go if you braised it before searing, then fridged after brushing with coconut oil it to develop the flavours and THEN seared it for that fresh crispy snap? That's the thing I love the most about your channel. The inspiration to just TRY IT

Tbf that eggplant steak looked scrumptious af. Like, you could just see how it absorbed all the flavour from that sauce. The biggest problem is just that it probably is not very filling. That jackfruit steak looks like it's very filling tho. Like, a proper meal.

Yeah I always thought about putting a more flaky textural component like jackfruit into seitan since seitan can be a little tough and chewy. It did end up looking the most like gyro meat though, would probably be good.

I did a dehydrated jackfruit nugget!! That came out awesome! I kinda want to do something similar to how I made this but dehydrate the fibers. I THINK that will end up making the hydrating flavoring process a lot better... and up the texture!

I bet with this texture of meat with just a bit more of whatever gives it chewiness, the right seasonings, using some of the tofu skin (as a thin edible casing) and some dehydration you could make vegan Slim Jim type snack sausage sticks. I like those, no one ever admits they eat them but they're in every gas station, convenience store, grocery store and on Amazon. I suspect they're a lot of people's secret snack. Lol

@@SauceStache I have a feeling that jackfruit and/or the dehydrating of jackfruit will make the end product more fish-like. I request that you1 have a second jackfruit sample along whatever jackfruit recipe you are experimenting with...and then dehydrate the second sample beyond what you are aiming for, and then **rehydrate** a little to your target. Also, maybe you could pound the jackfruit to weaken the plant fibres.

I traditional belgian dish i miss really badly is stoofvlees (pretty much translates to meatstew), seitan just doesn't cut it to replace the chunks of meat in the dish, because the meat has such a fibrous, soft yet chewy texture from having stewed for so long. I think I've finally found my replacement thanks to this recipe!

I am a meat lover..however I have been saying that I'm going to try Jackfruit forever now. I finally got a can of it. I'm going to try it w some BBQ sauce. To see if it tastes like "Pulled Chicken". I have 2 Vegetarian friends who said it is close. I just want to start eating more plant based and less meat for health reasons. I have MS and my Dr swears that eating less meat will help. So I'm trying it! Love your videos!

Would love to see you do a beefy meat like this in a way to mimic a good beefy flavored chicken fried steak. Much of the flavor for those comes from the breading, frying and cream gravy, so if you've got the texture you should be really close.

Wanted to say Gordon would be upset he's version was so lame after seeing yours but who cares what he thinks? The only thing that matters is that this recipe is absolutely AMAZING! Such a great texture - definitely one of the best uses for jackfruit I've seen :D It could make a great cheese-stake sandwich, I am sure! And I know all the recipes in your book are going to be even more incredible! Your ideas are always so creative but well thought-through it will be a must for anyone willing to experiment more with plant based cooking and give their meals (or the meals of their friends or family) a very realistic but still plant based touch! . It might be an interesting collaboration if you made a half dozen prototype steaks and then had a KZbinr who specializes in steak consumption to review and compare the taste and texture of the different prototypes to each other and a regular steak control.

I have been diving into a new commitment in plant-based foods after 32 years of no beef, turkey, crab, shrimp, halibut etc because of food allergies. We also have to be very careful with what kinds of grains we eat. There have been many years when we have been vegetarian. We are trying vegan days. One puzzle for me is you can't just make something taste like meat (for instance using carrots for bacon) and have a similar nutritional value. In the case of bacon that is probably good because it's toxic. I appreciate your channel; thank you for adding variety and information. I look forward to trying something like this soon.

King Oyster Mushrooms are my new love! With a big Asian Market close to me, near Tampa, FL, it's so easy to get them and they always have lots. And CHEAP! A cello pack of 3 big ones seldom goes much over $3.00usd. I have made grilled scallops, scampi scallops, shredded "pork" in a Brazilian Black Bean Stew over rice, and shredded grilled "chicken" for on top of a salad. So amazing and versatile. :-) Need to now try Stache's bacon recipe, as daikon, soy skins, carrot, and tempeh versions have left me non-plussed. And the Light Life Bacon in the stores is truly horrible.

@@strongtower1162 I don't even try the store bought fake bacon anymore. I created a recipe for a tofu bakon for a vegan restaurant I owned years ago, and it was a huge seller. We served so many BLT"s and people were asking to buy packages of my Fakon Bakon. Simple recipe with marinated overnight thin tofu slices, but it had to be frozen first cuz it has a better texture when thawed. And I used only one kind of tofu from the Organic section. Liquid smoke, maple syrup, some kind of soy sauce. Then fried it in coconut oil, let it cool, then I added a bit of the marinade in hot pan and sizzles it one more time. Omgoodness. Delicious! But know I'll be loving that mushroom recipe of yours! I'm going grocery shopping tomorrow and the first thing on my list is those mushrooms, and liquid smoke! Thanks so much for all these videos. It's really incredible that you take the time to do this. Just know it is greatly appreciated!

Simmered beet juice and some of that black vinegar or soy sauce. Let the water boil off to help add a bit of thickness to the liquid and then inject into the steak before slicing!

hey super chef!!! did you ever try to make some recipes using flax gel? my grandma uses flax gel (whole seeds boiled in water and drained) to style her hair, but the gel consistency is like egg whites. ground flax seeds is common in vegan cooking, but i never seen someone using the gel ^_^

You would need a filler to get a similar texture and even if you didn't add a filler, I'm pretty sure methycellulose alone won't properly "bind" jackfruit. So you'd have to experiment with both methylcellulose and a filler such as pea protein as he often uses.

I think if you crave meat this bad, you are a meat eater and must deal with it. Your body is saying, “hey you, give me a tasty animal.” Although, I do agree Jackfruit is a pretty decent substitute and we over eat meat products. We could do without eating so much meat.

Cravings have nothing to do with what your body needs. People wouldn’t crave cigarettes, sugar, soda, and junk food if that was true. You’re body would most like crave plant based highly nutritious food if that was the case. Btw that last part was a quote from a nutritionist just can’t remember who ;)

Also, when it comes to the book...will you be considering making an ebook too? I am a huge fan of supporting my favourite creators (you being one of them) BUT simultaneously not so keen on paying for the delivery nearly as much as for the book itself :D I know it is not the same as a real cookbook but I hope you will provide options for those overseas too!

Ok, this is completely unrelated to your video.....but......you're the best person for this I can think of!! I'm highly diabetic, and have to avoid most carbohydrate. But of course I miss rice. Rice in sushi, rice in curries, rice in paella..... I was having a meal with TVP for lunch and I was suddenly wondering, is there any way to use TVP not as a meat replacement as always, but as a rice replacement ? A challenge for you and everyone anyway!
