These dumplings require only two main ingredients, except for the seasoning.
The dumpling skin should be in a state that is easy to shape, while maintaining its shape when boiled,

Please keep the amount of flour and potato starch as much as possible.

150g Wheat flour
50g Potato starch (No corn starch)
3g (1tsp) Salt
30ml Water (when boiled in a microwave oven)
✤ In dumplings
200g Ground pork
150g Green onion white part
6g (0.6tsp) Sugar
35g (3.5Tbsp) Soy sauce
10g (1Tbsp) Oyster sauce
15g (1.5Tbsp) Mirin (or cooking wine)
15g (1.5Tbsp)Cooking oil (sesame oil available)
1g (1tsp) Ginger powder(minced ginger can be used)
Black pepper
✤ Dipping Sauce
10g (1Tbsp) Soy sauce
10g (1Tbsp) Water
5g (0.5 Tbsp) Sesame oil
2g (0.5Tbsp) Sesame seeds
Chili pepper (optional)
✤ Tips
You can steam potatoes instead of microwave.
The reason why cooking oil is put in the dumpling filling makes the dumpling filling soft.
If you mix it with 100% potato starch, it will crack and it will be difficult to shape it.
If you don't have potato starch, make it with 100% wheat flour, but the chewy texture will be lost.
