This is an amazingly easy recipe. I usually by almond milk, but my husband and I made your cheater version tonight, and absolutely loved it! It tastes so much better than the carton version, don't think we'll ever buy it again. Thanks for your commitment!

You do a great video! I've been making almond milk for about a week and just love it. I calculated my savings compared to buying it in our local grocery store. For a 3lb bag of almonds it costs me 15 dollars to get about 48 cups of milk, the same amount in the boxed version would cost me 42 dollars! Also the Almond Breeze brand I was buying contains a carcinogenic ingredient, a substance derived from red algae called carrageenan.

Wow I never knew this.. I have sooooooo many almonds... and always run out of milk.. I didn't realize you could milk from almonds... I'm kicking myself!! haha.. Thank you xxx

I use the almond pulp to make a raw version of tiramisu, so the dates give me a flour that is already sweetened. Another note on the flour: I keep it in the freezer until I use.

Awesome recipe Chef Joy! I tried it both ways too and both are great, but I prefer the soaked almonds way better for the reasons you gave about soaking the almonds. Also, I've shared it with friends and they also were surprised how easy it is to make their own almond milk. I don't strain the milk as I use it in smoothies and on my cereal. My daughter Marli strains the milk and then mixed the pulp with honey and forms it into balls and puts them in the fridge for a snack. Thanks again Joy.

Thanks much, great show! Interesting tip: Salt flavor can be added with sodium ascorbate, adding vitamin C to the almilk, also increasing shelf life (by a day or two).

What's left is just wet almond meal with some sweetening and vanilla :) I think you can use it in any kind of cooking that asks for almond meal. Just adjust the amount of liquid you add a little.

Gorgeous, made mine easy with adevice that contains a strainer. Blender cuit tout mix chauffant model:138, also heat for soup making. Soaked almonds, mixed, poured straight from device thanks to strainer and ready to cook with - almond pancakes and gratins.. Vanilla and maplesyrup for drinking. Wonderful, no more bought milk!

I use the lid to skim the foam off when I transfer the milk to a glass container. To reduce sediment use two bags and allow it to drip as much as possible before squeezing.

Jason, I used medjool dates, not figs. But figs would also make a yummy milk.

YogaForEternalBliss, I would never take the time to do that, but I if you are sensitive to the skins and must, a quick blanching of the almonds will make it easy to pop them from their skins. I don;t like the trade off of losing the extra fiber & nutrients plus I like the flavor of the skins.

I make the "quickie" version fresh and use it up that day. The soaked kind keeps 3-4 days in the fridge.

Thanks for the wonderful video. I wondered if I could use sliced almonds instead(without skin)if so, should I used the same amount? Should I throw away the water it was soaked in or could I use it to mix in the mixer?Also is almond milk as nutritious as cow's milk(it has no vit. D and less Calcium I believe)How about calorie wise(without a sweetener), if I'm on a diet?Sorry about all these questions.

I do- but it takes a special hook up here in California where I live. All almonds sold in Cali have been flash pasteurized. That said "raw" almonds that do spout when you soak them are fine! Even when I have to pick up that kind at Trader's when I run out between farm trips- they do spout, taste awesome and are as close as I can get. Its not worth sweating the small stuff ;o)

Yes- date seeds are as hard as stones! They will mess up the bladed of your blender (even a Vita-Mix!)

Gene, The calories will depend on how and if you sweeten the milk. You can use a lower calorie sweenter like coconut milk, a no calorie like xylitol - whatever you wish. The fat content will be the same as boxed - so the calroes from fat will remain the same.

Kelly, great question. Yes, essentially the are very similar. However I have found no clear data on the nutritional differences between sprouted almonds and regular almonds.

iroc- it is possible, just pricey. When I need truly silky almond milk (for something schmancy), I use the bags of my Norwalk Juicer and then press them through the hydraulic press. But - you are right- with the typical set up there will always be a little sediment.

Fat and water separate, that's natural. Only homogenization (which is BAD news!) blends it for keeps. Give it a shake and enjoy!

i love the video. thanks for sharing. i have a question...i get foam on top using sprouted almonds. is there a way to stop that? also, i hate sediment and still get it using a nut milk bag, is hanging it and letting it drip without squeezing a better way to reduce or eliminate the sediment? thanks.

Yes, raw honey works. Remember that honey is not advised for children under 2yrs.

Brandon, I am blessed to have a hook up for raw almonds. But, even the raw almonds from whole foods & trader joes swell when soaked and the skins break open. I've never tried to let them go all the way to sprouting, but the taste is much creamier than if you do not soak. The flash pasteurization doesn't seem to stop them from absorbing water and splitting as if they will sprout. Has anybody tried to take them all the way to sprouting??

I watched your original version of this video from a while back, and you had said that you could use the left over 'pulp' to make almond flour. Is that true, even though you would have remnants of dates in the pulp? Not saying that you're not right, just that I am new to this so I want to make sure I am doing it right! Thanks!

And- yes- you can use stevia if you are fond of the taste. I an not- so when I use stevia I use it as what I call a "booster sweetener". What that looks like is using a little stevia to amplify the sweetness of say maple or dates without using as much of those higher glycemic options. It is a dietary compromise that allows me to have some of the flavor of the sweeteners I enjoy without having the ups & downs in blood sugar that are the root causes of things like inflammation.

I would never take the time to blanch the almonds and pop them out. Blanching kills enzymes and I don;t have the patience. Plus I prefer the benefits of the almond skins!

Agreed- but the almond butter option seems fresher to me than the boxed versions with all that extra junk in there. Just a short cut for when you forget to soak, or are not interested in soaking.

Hello Joy, I've just started on my journey in the "raw food " world, I have some of the equipment that will make this possible. I've just gotten a food dehydrator, a blender/processor and a juicer to start. I want to for sure purchase a vitamix, but for now I can't afford one. I'm looking on ebay, this is where I've gotten the items that I have.So until then will I be able to make this almond milk in my cuisinart blender? Can't wait to try the " Rawvioli" Wow!! Thanks
