ALMOND MILK SHELF LIFE: Because it hasn't been commercially homogenized, or mixed with stabilizers, homemade nutmilk begins to slowly separate into 3 layers** in a few short hours less than a day, and will be fully separated (and fugly in appearance by day 3). A lot of people mistakenly throw out their nutmilk when it separates, think it's gone bad. JUST SHAKE IT UP ! From experience, homemade nut milks are best (if refrigerated) within 6-7 days, and give it a quick shake each time you want to pour a portion. ALMOND PULP TIP: After I've accumulated several pints in the freezer, I'll thaw it in the microwave, buzz briefly in my food processor to break up any clumps, then load up my dehydrator by pressing the pulp flat on parchment to 1/4" thick (simply lay an unopened 1 gal ziplock freezer bag on top and press the pulp flat onto the parchment with the bottom of a sauce pan), and run it at 140F or so for 8-12 hrs or until totally dry ... then I'll buzz it up one last time in the food processor, and the vaccum seal it into a glass jar, where it will keep at room temp for many months. I use it in baking, and for making no-bake crackers, and if you want to turn it back into nut pulp in order to follow a recipe for same it's easy to add some almond milk back to rehydrate it (add 1/4 volume of milk to dried pulp). Anyway, it's high in protein and modest in fiber. Ok, that's my good deed for the day. Thank you, John, for getting me to try Jackfruit. ------------------ ** I refer to the 3 layers, from top to bottom, as Almond Cream, Almond Water, and Almond Lees.

I find that if you use just enough liquid in the beginning of processing whole foods,the pieces won't have the liquid capacity to float around in the blender,so the blending material will process quicker and finer since it is so close to the blade.Gravity will be more effective as well. After you've gotten the desired consistency,then you can blend the rest of the liquid to make it a drink. Ratio being 2 dry to 1 liquid in the beginning,depending on how juice filled the whole food is.

Hi John, I had few questions about making my own milk I was hoping you could help with. 1. In the video you say 'make sure the juicer is set up for juicing'. What did you mean by this? Is it not always set up for juicing? 2. We tried your method for making coconut milk today, but it didn't come out like yours. The coconut fat seemed to get stuck between the screen and the screen holder and didn't make it in to the milk which made the milk quite watery. Do you know what we did wrong? 3. What is the difference between the 2 screens that come with the VSJ843? One has small holes and the other has slightly bigger holes. When should I use which one? 4. Should the grey pulp plug at the bottom of the jug be closed all the time? I seem to recall in one of your videos you say to keep it open when using the juicer for something, but I can't remember what. Thanks

John, I run soaked almonds straight through the Omega without running them through the VitaMix. I drop in a handful of almonds and add water. I run the pulp through one more time while adding water. My nut milk comes out beautiful. One issue is that the machine can be difficult to take apart. I've not tried coconut milk yet but would tend to skip using the Vita-Mix. Although I've had no issues, I may use the Cuisinart to finely chop the nuts to lessen the pressure on the Omega. Thanks so much for all of your videos!

Yes, this is my fav juicer for making nut milks. Other juicers I have tested have not worked as well as I mention in the video.

Some varieties of almond trees will actually grow in the northeastern U.S. up to climate zone 5. Fresh coconuts are much more expensive and not always available on the east coast, so usually it's canned or dried coconut or nothing.

Just curious, have you tried making acorn, beech nut or some sort of other foraged nut/seed milk? Acorn milk might be more practical as beech nuts take a lot of work for little reward.

I make nut milk every day so I was very interested to check out this video. But the main argument to switch to vertical slow juicer to strain the nut milk mixture is cleaning time. In my experience it takes me more time to clean slow juicer than nut milk bag. Although I have only juiced vegetables and leafy greens, together with some fruit. Maybe it is easier to clean slow juicer after making nut milk than juicing veggies? Thank you John!

OMG unbelievable so many people are dealing with "Almond pulps"😂 you know you can make almond into almond butter and add a splash of water in it, mix well, add one more splash of water and stir... Repeat. You do it and the almond butter will become weird in texture at the beginning and then get smoother and the color will turn lighter and when it's in a silky thin texture, you can add a lot of water in it at once. Then almond milk done. The mixing job can be done by a mixer. No pulps left that make you have to do a pancake or anything ..

John, thank you for this educational video. I want to buy my juicer through you but need to watch many of your videos first to make sure what I get will do what I mostly want it to do. You did a video with Fully Raw Kristina on the top 3 juicers that you recommend a few years ago. The Omega vert 330 Hd or 350 Hd was your pick. Surely an up to date Top 3 would be welcomed. In this video you mentioned using the almond milk with a probiotic to make a cultured almond milk. Would using a kefir grains work as well and if so, would I want to use milk kefir grains or water kefir grains? (haven't figured out why there are 2 separate types in the first place...marketing ploy?)

But won’t you have to lean the screen fro the juicer? Not really saving cleanining but it is easier than squeezing [a nut milk bag] I guess. You can do this same thing with ONE machine Omega 8006. Use the blank screen to process the SOAKED and strained almonds into meal. Add pure clean water to the soaked meal. Then switch to the juice screen and ladel the pulp mixture. Less cleaning, no squeezing, and only ONE machine required.

Yes most of us don't use soy anymore but I used to use this process to make soy milk as well. Anyway I agree the process of adding water and nuts to the juicer does not work as well.

I always struggle opening (Thai) coconuts. I do not have a cleaver. Tapping with a hammer does not work so I use the hammer and a chef knife to pry it open. The knife has now been downgraded as the "coconut opener" as its edge is all wonky and pretty useless. LOL. Btw in my country one Thai coconut cost $4.50!!!
