Where are pilots generally looking when asked to provide souls onboard while still in flight? Does it exist electronically somewhere and if so can it be brought up right onto one of the panels, or does it get filled out and buried in the back of a binder somewhere that is then stowed prior to departure?

It’s probably scratched on a piece of paper that the pilots write down when the agents come down for the final count. That’s what I do at least.
