Will the adapter plate also work with most any 100mm VESA mountable monitor? And what about Dell S series monitors? -- almost all the Dell monitors with some major vendors are now S series.

It will. As for the S series monitors, they are our consume models. I have not gotten to test them. Just did a search on Dell.com and the models I just looked at support 100x100.
