Each fall we partake in the National Cowboy and Harvest Festival at Silver Dollar City in Branson, MO. Here is one of our shows/demonstrations of our sourdough biscuits, taken from A Taste of Cowboy cookbook.
Sourdough Biscuits
1 ( 1⁄4-ounce) package rapid-rise yeast
3 cups Sourdough Starter (below)
4 to 5 tablespoons sugar
1⁄3 cup vegetable oil
2 1⁄2 tablespoons baking powder
2 teaspoons salt
2 1⁄2 to 3 cups all-purpose flour
1. Preheat the oven to 350°F with a rack in the middle. Butter a 9-x-13-inch baking pan or 12-inch cast iron skillet.
2. In a large bowl, dissolve the yeast in the starter. Whisk in 4 tablespoons of the sugar and let sit for 1 minute.
3. Whisk in the oil, baking powder, and salt. At this point, taste the starter. If it is too tart, add a little more sugar, to taste. Remember, the first time you use the starter, it will be the sourest.
4. Slowly begin stirring in the flour until it makes a soft dough and is no longer sticky. Turn the dough out onto a floured surface and roll out to about 1/2 inch thick.
5. Cut out about 16 rounds with a biscuit cutter and place on the baking pan or skillet close together.
6. Cover the biscuits with a buttered piece of wax paper and let rise in a warm place for 40 minutes to 1 hour, or until nearly doubled in size.
7. Uncover the biscuits and bake for 25 - 35 minutes, or until golden brown. Brush with melted butter and serve warm.
Sourdough Starter
4 cups warm water
1 ( 1⁄4-ounce) package rapid-rise yeast
5 tablespoons sugar
4 cups all-purpose flour
1 russet potato, peeled and quartered
1. Add the warm water to a crock jar that holds at least 1 ½ gallons. This will prevent the starter from frothing over while it’s setting up.
2. Whisk in the yeast and sugar and let sit for 1 minute.
3. Slowly whisk in the flour. Drop the potato pieces into the bottom of the crock jar. Cover with a tea towel and let sit on the counter for at least 12 hours, stirring halfway through. You can let the starter sit longer for a more sour flavor.
4. Before using the starter in a recipe, whisk it briskly until smooth.
To recharge the starter:
1 1⁄2 cups warm water
1 1⁄2 cups all-purpose flour
1 1⁄2 tablespoons sugar
When you have used 3 cups of the starter, whisk all the ingredients into the jar. The starter is ready to use again, or you can let it sit for 6 to 12 hours to create a more tart taste.

Coming here after a long while. Kent is far funnier here in front of a live audience than some later videos. He is a character! Also his recipes are solid! When I make them they work out just fine!

Its 4 cups of warm water, a package of dry yeast, 5 TBSP of sugar and stir well, then add 4 Cups of flour and stir well, then a peeled and quartered russet potatoe. Let set for at least 12 hours and then stir down and its ready to use

I'll have to try this. It looks a lot easier than most recipes I've seen. After watching 3-4 on your you tube videos I'm Hooked. I am awaiting the delivery of my Taste of Cowboy cookbook. I do know a pinch, dab, smidge....I've been cooking since I was 9 years old and I'm 69 now. Your show is my bedtime watch. Thank you for being so down home honest and pure country.

Just wanted to say thanks-again!! The sourdough cinnamon rolls with apples (I added walnuts & raisins b/c not enough apples) and then made the biscuits with supper. Made your fried chicken last night and my family ate about a week’s worth...evidently it was that good(!). Seriously, you have just blessed our last two weeks with our daughter home visiting. I have not been to Silver Dollar City since I was a kid. I also used to go and see the Ball Knobbers in Branson. Then we would go to Dog Patch USA. It is not around anymore. So sad to see it just falling apart like it is. . .Thanks for the cool memories. . .

Wish I could have seen the biscuits when they were finished. When I worked for Kentucky Fried Chicken back when they still used Lard to cook chicken in we had to make the dough for the biscuits and cut them by hand. Now everything is cut corners this and cut corners that. . . Love your stuff and have a blessed day.

We used to live in Nixa Mo. and back in the day dad would load us all up in the ford Ltd and take us to Silver Dollar City....I loved it, homemade soap, homemade apple butter and the Beverly Hill Billy’s showed up! Hard to get to that wilderness.... sweet husband grew up in Alaska.......Practice living in a tent and cooking over a fire, then just go with your tent. You'll find a place and have a great time.

Kent that wood be something. I'm on the West Coast a cowboy going down the street would not get a second glance. Big Western scene here, the guns just don't hae bullets. There is a Island that becomes a living USA western town. The Island is not big, I'll see if a can find you the link.

My wife actually found and bought a set of 4 measuring spoons that are for the pinch, tad, dash & smidgen measurements. She loves your videos cause she is from Woodward, Oklahoma which is just east of the panhandle corner and way of cooking reminds her of her grandmas cooking.

Please accept my great appreciation for your videos. Sir. Thanks to them, I have successfully restored and re-seasoned a 10" griddle (un-identified), a 6" skillet (un-identified), and a new Lodge 8" skillet according to your directions with great results. I knew how to make cornbead and biscuits in the oven, but knowing ow to do it in a dutch oven with coals is invaluable. I'm currently re-surfacing my new Lodge 8" dutch oven, and will be re-seasoning it over the next week. I can't wait to make my first batch of cornbread in it Thanks again! PS - Your cookbook is in my Amazon cart for my next order.

Made some cat head biscuits with the sourdough starter. First time I've ever made biscuits from scratch. Good stuff! Also made some chicken-fried steak with it. What started out as a 1/2 inch thick steak became an inch thick real quick. Especially after taking your advice and double baptizing 'em.

I sure do wish you would come to florida. In the county of Volusia we have a pioneer arts settlement that has lots of old time traditions and as you know florida is the first state that had cows and horses brought by Juan Ponce Deleon. The town I live in is called Deleon springs. Legend has it he thought this was the fountain of youth. My Brother in law runs the old sugar mill in the state park that bares the name Deleon Springs.. its been on the food channel. Love your videos!

The selling point for me was when he mentioned that the things you need actually come from the pantry... I watched Gordon Ramsey talk about how easy it is to make braised short ribs and he rattled off spices you can only buy in India....

My Granny (bless her soul) made some great biscuits. She used lard or shortening in hers, and buttermilk. She liked to make them big man sized, and nice and round so she used a canned milk can to cut them out. Those cans back in the day had soldered on lids, so she would melt the solder off the can in the coal stove and end up with a sharp edge to cut out her biscuits. She never complained much, except about those newfangled cans canned milk cones in now with a rim on both ends.

Thank Ya Partner. I cooked these this evening for my elderly parents and brothers and They ALL were really impressed. So Now, I added to my Starter and also made a second Starter so I can try to make a Loaf of bread.

Gonna have to give this a try one day, my grandma only made Buttermilk Biscuits so I've only recently tried sourdough anything and I actually like it some so this will be a good first thing to try..make some good crispy bacon and some gravy and I got breakfast..gotta wait for my mouth to heal from the surgery though before I can have the bacon.
