My nine year granddaughter found this in your Taste of Cowboy and we made the starter one day and when she came back a couple of dats later we had a good time making up the dough. But then she ask where is your stove Poppa? I pointed to one of my Dutch ovens and did she get excited. She is now on her way to being a camp cook. As a father of two. I have to say there is nothing better than my kids expressing interest in learning about cast iron cookware. Everything I have is pretty much an antique. Got a few gate marked kettles I make chili and soups in. Back to my original point. Seeing my children take interest in caring for cast iron is such a great feeling. Weather I am making chili, frying chili, or baking something in cast iron in the oven. Knowing my kids are enjoying right now is a super proud dad moment to be honest.

I see Kent Rollins and Cinnamon Roll in my recommended. That may have been the quickest click in KZbin history. I've seen this recipe in Taste of Cowboy, but haven't tried making them. I just purchased my 1ST EVER CAST IRON pan...and have been following your channel now for a few weeks... and Must give Credit Where Credit is Due!... "THANK YOU!" for all the Great Advice and Recipes. Ive got my Pan "Seasoned" and its Doing Great!... NEVER did I Ever think, that a Cast Iron Pan could be SO Easy to Cook with, and have the Clean UP be So Worry Free!... I work on TV shows here in LA... we are Not shooting and have lots of time with this Covid Crisis... and Learning this New Skill Set in the Kitchen has been Excellent!... in the oven now.... EDIT: OK people...Another fantastic recipe from Mr Rollins. I will add I did adjust a few things per family tastes. No oil but butter. Dark brown sugar rather than white for filling, walnuts rather than pecans and I only had Eastern potatoes on hand rather than a Russet. (I don't know if russets have a particular place in sourdough starter or if any spud will do) My starter smelled like I was going to still some vodka later on. My starter tasted like a strong beer before I got to making the dough (I was worried but Kent, you haven't let me down yet) but figured why not go to completion. WOW! A really nice dough with great mouth feel and a flavor that works great with sweetness of the filling and I see how it could go savory with the green chili chipotle relish or the ham/meat. Oh yeah this dough will work.

I've made this now maybe a dozen times and this is what I've learned Everyone should try these at least once Freezes very well. 2/3 cup chocolate chips in the filling- awesome You can use brown sugar instead of white in the filling - melt butter and mix with brown sugar and cinnamon - should be warm enough to spread out on dough. You can use a waxy or starchy potato (eastern vs russet) Waxy adds a different deep flavor. IMHO Oil can be omitted from the dough for a more bread like consistency rather than gooey dense dough (if you prefer lower fat or bread like consistency) It's a forgiving starter - you can add more water to the starter to keep it from trying to rise to the bowl rim. Also a some more water will give you 3 solid recipes worth of starter at least. If you don't have all the starter you need for a recipe just substitute some more water to make up for volume. Best starter flavor is within 24-48 hours. I prefer to use my starter up then make more from clean start. If you sample the starter don't be alarmed by it's flavor. Baking tempers and changes it. The starter tastes of alcohol and very deep beer notes amongst others. edit: to get 12 rolls of pretty consistent size once dough is rolled up, clip edges if too much excess dough hangs out Cut roll in half Cut each half in thirds cut each third in half 12 rolls
