Der italienischer Nudelsalat mit Pesto ohne Mayo ist super lecker zum Grillen oder als Abendessen

The Italian pasta salad with pesto without mayonnaise with olives and tomatoes tastes delicious. This simple salad with pasta is also quick to prepare and looks appetizing too. This summer salad is also a delicious and healthy side dish for a barbecue or for your lunch or dinner.
Ingredients for the colorful pasta salad
300 g pasta (I used gobbetti)
4 tomatoes (approx. 500 g)
1 jar of olives (drained weight 170 g)
100 g cheese (e.g. Parmesan)
1 bunch of basil
½ bunch parsley (optional)
50 grams of pine nuts
Cook noodles according to package directions until al dente.
Preparation of pasta salad with olive pesto
1. Cook the noodles according to the instructions on the packet, drain and rinse in the water.
2. Cut the tomatoes into small cubes. Slice half of the green olives (optional). Dice or grate the cheese.
3. Roast the pine nuts at medium heat without fat for about 2 minutes. When they turn golden brown and smell delicious, transfer to a plate to cool.
4. Put the basil (except for 3-4 leaves) and parsley together with the stalks in the blender. Gradually add the olive oil. Add the remaining olives and Parmesan. Season with salt and pepper and add 2 tablespoons of balsamic vinegar to taste. Blend for about 30-45 seconds or until desired consistency is achieved.
5. Mix all ingredients well and let stand for at least 15 minutes.

Gibt es eine Alternative zu Oliven ???

Hallo! Vielen Dank für die Frage! Oliven kann man einfach weglassen.:-))) Als Alternative könnte man etwas Kapern, Jalapeno, wenn Du es schärfer magst oder auch Gewürzgurken. Aber wie gesagt, im Zweifelsfall einfach weglassen und eventuell nachwürzen. Viel Spaß und beste Grüße!
