Hi Chris, what you would call kum quats are not kum quats (they may look the same but believe me they're different. They are instead called calamansi a small lime that is endemic to the Philippines. You will realize that in the Philippines Philippines calamansi is a staple in every table because we use them a lot in our dipping sauces. Calamansi is squeezed in soy sauces, fish sauces, shrimp paste. There's hardly any Filipino food without some participation of calamansi. Try sisig next time. You can find a really good sisig in Dennys Grill or Max's

Smokeyness in Chinese food usually is because of Toasted Sesame seed oil. There isn't enough smoke in a wok to flavor the food. You have to have food enclosed around smoke for it to absorb the flavor. #JustSayin Also, the sweetness is because of Mirin used in the sauce. There is most likely oyster sauce too as it is used in most stir fry sauces and gives that Umami flavor that you just cant peg what it is.
