I found timing doesn't matter as much as the brew ratio does. I've had some good 60+ second shots, although my machines pump probably hates me :D

Yeah I totally agree it just depends what type of profile your shooting for and what flavors you want in your espresso.

Hey Joe, thanks as always for the videos. Have you tried making pour over with the DF64? I have a Sette 230 [modified 30] that seems to get poor reviews for filter coffee from just about everyone who’s used one. I see 64mm SSP burrs as my end game, but with RPM control. I can’t decide if I just wait entirely to start messing with pour overs or get an entry level hand grinder in the meantime. Would love to get your opinion and anyone else’s actually.

Yeah I made poor overs with a friend of mine who’s much better at Pore over and more into it than I am. He said it was very good I will say the coffee came out wonderfully. It’s super accurate in terms of grind size. The only downside would be at the course or grind setting, the static it becomes an issue it sticks to the side of the grinder a lot. So if you do that make sure you’re doing ross water droplet method. In terms of RPM you could get a dimmer modification that would be able to get you something like that on the def64 but it won’t be super accurate since you won’t know the RPMs At what dimmer setting you have it on

Df64 is kinda a knock off of Lagom p64, if you want a similar grinder (can use the same SSP burrs) but nicer built AND WITH variable RPM that's a good option but much more $$ than DF64. 1zPresso hand grinders are great for pour overs (Look into their different models) and easy to use if you want a budget option, bonus of it being compact, portable and not requiring power. With two grinders it's usually nicer than switching between brew methods on a single grinder. If you don't need it to do espresso the ODE with the same SSP Multipurpose (unimodal) burrs should be a good cheaper option too (Vs DF64 or Lagom). DF64 with SSP burrs, either espresso burrs or unimodals are great for pour overs, but the unimodal is the best for coarser brew methods my opinion.

@@JoeyVaracalli Wow! 4.5 is the coarsest that I have gone with this grinder. Typically I am around 3.4 (when using extended preinfusion).

@@nickkom7866 with infinitely variable grinders the numbers. Can be kinda arbitrary depending on how it was calibrated. For example right now my df64 is set at 45 ish but if I unscrew the plate and screw it back on good chance I’ll be in a totally different range just because of where the threads started to screw in at

@@JoeyVaracalli I found the #'s are relatively consistent the touch point isn't going to change with the DF64 unless you rotate the burr orientation and alignment is different. Your using the SSP burrs in the DF64? Those burrs are thicker so you end up with a espresso being around 45 instead of around 15 but I'm guessing your touch point is probably like 30. So you're still about 15 away from your burr touch point. Grinder to grinder you'll have different numbers, but as above, you can probably compare by saying your espresso setting is this many ticks away from the actual 0 point where burrs touch.

@@JoeyVaracalli That's where I am really torn as I am trying to decide between the DF64 and the Niche Zero...if I do add the SSP burrs wouldn't it make sense to get the Niche Zero over the DF64 with mods ? Thanks always for sharing your thoughts !

Are these the 3 most ideal grinders for a boutique cafe? I got df64. Now next eureka.. Atom, zenith 65 etc. Do you think eureka and filter for Espresso and portafilter, df64 for v60 are suitable?
Specialita IS good, (many people including myself) have done a 3d printed single dosing hopper for it), you can get a blower / bellows with it but I don't think it's really necessary. The new Eureka Mignon Oro Single doser I think you're thinking about, has issues for a lot of people I don't think it's done yet, they're going to be working on updates and improvements for the next batch out. I was shocked at how fast Atom 75 is, also quiet. WIth the hopper barely full I got like 5.33g/sec out. Sounds like you're getting about 8g/sec with a full hopper! It does really vary based on how full the hopper is which isn't going to be good for dosing consistency. Baratza Sette is also pretty fast but I don't think anyone is claiming it's quiet because it only grinds for a little bit :P Atom is just really quiet. They did a good job with that, for some reason Eureka Oro / SD and the XL is louder than the older and cheaper Specialita model. Specialita is Quieter than the DF64 I think, not as quiet as the ATOM though.

Yeah the atom is insanely quiet 🤫 but I agree the dosing can be difficult that’s why I mentioned that they should do grind by weight as an option

@@nickkom7866 I normally fill it then wait for it to go down to about a 1/4 left. But if I’m gonna change beans I wait till it’s fully empty
