We bengalis usually make it with chana dal only and we do not steam it... we shallow fry the batter till it's dry and then let it set, cut and deep fry...And our gravy is not dal based...we usually make it will alu, tamatar, adrak, grated coconut and normal spices and the dhoka cooks in it...steaming looks way more convenient... I will definitely try this one out ..

Being a bengali and a huge fan of yours , I would like to mention 2 points....dhoka is never steamed , the mix is sauted in oil and given shape and then deep fried. Second , 'dalna' is a specific type of gravy , you may put potato in it....dal is never used in this....the gravy made up of ginger and tomato with other spices.

My mom always used to steam dhoka, that's how I have had it all my life. Dhoka is made differently in East Bengal and West Bengal cuisines. I totally agree on the daal aspect, the gravy is always made as a gravy and not in daal

The Bengali version is flavoured with whole gram masala and tej pata and is made just a little sweet. The gravy seasoning must have jeera, tej pata, whole garam masala and adrak. The gravy base is a mixture of jeera, red chili and haldi paste. Tomato paste may be added. It's a favourite in my family and my mother and each aunt would add their own unique style and each version was a winner. Thanks for reviving sweet memories❤

Lots of comments on steamed or not, how dalna is a specific kind of sauce/gravy. I personally cant wait to try this idea. Also the idea of steaming is very resonating to someone who cooks. It reduces the pain of managing the whole pile of sticky mess while trying to reduce moisture and slow cook. Also it gives a better cook on the dal mix and goes easy on the stomach. Also love the idea of the urad dal in the mix. Giving all of it a shot right today! It would be really nice to see an episode where similar dishes from the country are compared and their nuances explained, e.g. gatte ni subzi and dhokar dalna + other similar

It's a totally different recipe of Bengali's Dhoka'r Dalna. We only make it from Channa dal and we never steam it. Two important things being a bengali myself: 1.Dhoka is never steamed like dhokla, the batter is dried up in kadhai and then the dry batter is shaped manually to form a cake, which is then cut into pieces. 2.When you call dalna it's a specific type of gravy with no chana dal in it. When the dhoka itself is made of chana dal why would we overload it in gravy also!! Dalna gravy means simple tomato and ginger with jeera ka tadka.

My grandma used to make this dish for my father as it was one of his favorite dishes. she asked me to eat it, I never liked it when i was a teenager, so I used to make weird excuses to avoid eating it.
