I share with you the recipe of Dal puri / dholl puri.
In my opinion, in Mauritian cuisine, if there is one essential that deserves to be tasted by anyone visiting Mauritius, it is the dholl puri. It's a kind of crepes or savory pancakes stuffed with dholl gram (split peas) and garnished with carry and satini / chutney
Very popular ,
it 's the must of Mauritian street food.
Ingredients
250g dholl gram (split peas)
1 tsp ground turmeric
1/2 tsp ground / powdered cumin
slightly toasted
Salt
for the dough
________
1kg white flour
600 ml split peas stock
3tbsp oil
cooking oil
note: cover them with a cloth so that they do not harden
