When it comes to the length of the thread you cut for the needle,do you just estimate how much you'll need for a particular shape/section bc sometimes I leave the thread still connected to the rest and it gets tangled but when I cut off a certain length it's never enough and I have to re-thread

It's okay if you re-thread, I do it as well :) It comes with practice to estimate how much thread you need. You are correct, if to take too long thread, it will get tangled. So I believe there's nothing wrong with working with shorter length.
