That’s the point it’s a mockumentary, which is a mocking of a documentary in which the camera men are not extremely professional. The people in the office are (for the most part) aware they are being filmed that’s why Jim makes frequent looks at the cameraman and the interviews each episode. However, where this show makes itself a true mockumentary is through the use of hidden cameras in certain scenes where the cast genuinely doesn’t “know”they’re being filmed. The car cameras are a good example of this with them on the dashboard, they’ve done some scenes where the cameraman rides in the car with them like when Michael and Dwight drive into the lake but other times the camera crew of the series opt to conceal the camera snd the office members don’t know their being filmed. A little hard to explain, but basically the office characters KNOW the cameramen are recording their day to day activities since it’s a mockumentary.

It's not exactly uncommon. Seinfeld ended 25 years ago and they upload stuff on their channel all the same. Friends ended 20 years ago, same deal. House M.D., finished 10 years ago, also plenty of activity. Am sure there are loads of other examples. It's just cheap advertising for shows that you can still watch online, doesn't matter when they ended really.
