big hammer obviously work however consider using a big Mackerel swim bait like the Storm Wildeye live mackerel. Storm's mack is 6 and 1/2 inches, weighs 2.3 oz and comes with a 3X 7/0 hook. These work really well for the exact reason you mentioned, easy large target.

Adam, I don't want to burst your bubble, but the white sea bass is far from lazy, they're actually a highly predatorial fish. They are, however, instictually intelligent and somewhat elusive making them a bit more difficult to catch.

From a freshwater fisherman that has no clue about the salt: why not use a net instead of a gaff? Easier to bag the fish, check for regulation size, release if need be. No axe to grind just honestly wondering why gamble with the gaff.
