I want to make my own sushi, I've seen a lot on how it's done, but my biggest issue is finding fresh sushi grade fish in my area. The closest thing I have is an HEB 30 minutes away that claims to have farm raised fish, but the flesh was slimy, which tells me is not fresh at all and not safe to make sushi with.
