This is so true…it was a small world to meet him at a food show and then say I will stop by his place to try his food. Then get so surprised about how good it was. I can’t believe this level of restaurant in such a small town. Really amazing.

I think his knowledge and techniques are incredible. One thing to mention to Chef D J, please scrub your fingernails prior to service. I used a toothbrush and some soap or toothpaste and scrub down my fingers, fingernails, and hand before service to ensure my customer see that they're getting 100% clean piece of fish.

No offense to the chef, but washhhhhhhhh your hands!!!!! I’ve never seen such dirty hands handling fresh, raw fish. Sanitation matters. Especially clean finger nails. You’re serving people food and touching it with your bare hands. Clean your hands!!!! Have some respect for the food you prepare and your customers. I wouldn’t eat anything prepared by dirty hands. It’s disrespectful. I would never do that cooking for a guest, especially a renowned guest!
