I don’t know why these videos are so addicting, but I love seeing what others eat for supper. Last night I cooked salmon, with mini potatoes, broccoli and a Beurre blanc sauce. I’ve never made that sauce, and it was absolutely delicious! 😋 I agree, what is happening in Ukraine 🇺🇦 is horrible, and we all need to keep praying 🙏

Hi, Rachel and Todd. I know the emotional rollercoaster your heart is on at this time. I know you have a strong faith in our Lord. My son was in the army and reported to Ft. Campbell KY right out of basic training. This was three days before we were attacked. Very emotional time for all of us. He was one of the first on the ground at the airport on Afghanistan. Our church prayed for him, and his fellow soldiers. In fact, every Sunday school class in our church stopped and prayed for them. I was pacing, crying, and sat down with my Bible. It opened to Psalm 121. It brought great comfort to my family and me. I hope it can bring you comfort as well. T

When I water bath a few pints, I just use a smaller pot with a lid, and jar rings on the bottom for a rack. Saves time and a lot of water. As long as the jars fit, and the are covered with water, you are good to go. A small stock pot is good for this.

love this series, heck I love any meal inspiration that doesnt include two cans of condensed cream of chicken, a pat of cream cheese, and a package of ranch. 😂😂 Incidentally, I have that exact cast iron skillet, that size/shape. I use it every single day to make my husbands breakfast eggs before he heads out to work (our own chickens of course).

The steam canner has been amazing for me! It wastes less water and electricity if you're only doing smaller batches. I accidentally boiled it dry doing a second batch of strawberry jam last week and it's still kicking. I'm using a glass top stove in case that makes a difference. Thank you for all of the great content!

A steam canner is probably the best idea for high acid canning on a glass top stove, since it’s lighter weight with less water.

Interesting to know this. I reuse the water for doing dishes, watering plants (no vinegar) or use it to make my liquid laundry soup. It's sanitized water, as long as no seepage or breakage. A very nice alternative, definitely!

I've seen those steam canners and thought they were a great idea. I can't lift the waterbath canner full of water either so I just use a 1/2gal.pitcher to add or remove water as needed. I love the idea of using less water for many others reasons as well. Thanks again for sharing your meals with us.

I just got a steam canner and I love it. When it's empty it is so light. You only need a couple quarts of water so it's great for many reasons.

But if they were I would support them fully but I know my heart would be heavy during times we are going through right now. My prayers are with you both and for your children. I just started canning - I last did it 40 years ago with a Master Food Preserver class. Well, I finally bought a pressure canner (I do own a water bath and have done some salsa over the years.) Saturday, I made some chicken broth and canned it!. Out of 7 quarts, only 4 sealed but I consider it a victory! Today I made chicken soup and will be canning it tomorrow! Wish me luck! I have all sorts of ideas of things I want to can - and that's due to people like you - giving me ideas! Thank you!

I just wanted to share that I have used regular cooking pots that are taller for small batch canning. Sometimes I only have 4 pint jars. We live on a well and I am all about conserving water. In the bottom of my pot I use an old tea towel or a broken plate to rest the jars on. So far so good, and I am not a professional canner and I love watching your videos! Thank you.

I made the potatoes using the canned potatoes! Game changer. They were so good and that crunch. I added salt, pepper, garlic powder and fired them in a little bacon grease and avocado oil. Thank you so much for sharing the idea!!!

Well I can totally identify with the whole "kitchen gadget" thing! I do love each and every thing I buy even if I don't use them as often as I would like and I'm certainly not ready to part with them. I won't pull the trigger just yet on the steam canner. As soon as I make canning a part of my regular routine I might get one. I'm just barely getting started. When I lived in Alaska I didn't garden but we would get a monthly fruit truck from California. That's how I learned to can - peaches, hatch green chilies and cowboy candy. It's great to be able to open something you put up. Love that Curious George jam jar! And thanks as always for sharing your knowledge.

I have been using a steam canner for to years now and I LOVE it! I do not waterbath anything anymore. It's so easy to fill AND empty. I have had no problem with lids sealing.

When you guys were talking during the first meal you were showing, you reminded me of my husband and I the other night. I sat down at the table to watch something about the Kitchen and the Garden during War and as soon as I hit play my husband started talking to me, so I paused it, started it back and he said something again. Then I started telling him about it and then said I was done, but it was so interesting I had to tell him more. LOL You guys have a way of making tortillas look so good. I really need to get them out of the freezer and experiment with them more.

I got one of the steam canners last year and absolutely love it. I used it this past summer and did all my fruits, jams and juices in there. It’s not as heavy as my blue granite water bath and doesn’t use much water. I’m sure you’ll love it Rachel

It was a game changer for me with waterbath canning. I love it. It is kind of thin aluminum, but works great. Price was not bad either.

Corn tortillas are what they eat in Mexico. I would love to learn how to make tortillas, corn and flour. I seem to not be able too, no matter what I do. I just ate but you just made me hungry all over again.

I just wanted to say that I have had that same steam canner for just under a year and “I Love It” I usually can out doors or in the garage over a propane flame because I have a ceramic top stove. With this canner, I can can indoors because it is easier on the stove top. I hope you will love it as much as I do. Have fun!

I purchased a Victorio steam canner about 4 years ago, and I absolutely love it. It saves time and energy. No guessing how much water or waiting for the water to take forever to heat up. I think you'll love it.

Love my steam canner. Water bath canners hold so much water, I am 79 and can’t lift them any more. I have to fill them 1 quart at a time and when cool have to ladle it out, dump into a smaller pan, then water my plants. It’s a pain in the butt. Don’t like wasting water.

Ham steak and sweet potatoes...yum! I have that steam canner and I love it! Light, uses only 3 qts of water and it works wonderful for smaller batches of water bath canning.

I’ve been using a steam canner for 10+ years. I actually have two. Mine is a Victorio. You can also use it as a water bath canner too. Love it.

Todd, I loved your al pastor. And I enjoy how much you are a fan of sous vide. Which means I also love your gimmick of freezing the soup mix before putting it in the chucky bag. Brilliant! I only use my steam canner for water bath. - about 4 yrs now. It makes so much sense. Best thing for me is not lifting the jars from that boiling water. Just open the lid and slide them onto a rack. the temperature is higher than 212, I understand . You will love it. Pickles, fruits, tomatoes if acidified.. Energy savings and time savings are my second favorite feature. That means you can process a bushel of fruit so much more quickly.

I have to mention - we bought a Sous Vide that my husband uses in his Smoked Bologna (in smoker for 2 hours , then finishes it off with the sous vide which he cut and adapted an old cooler to use. We saw you guys use it first . And thanks for the hint of adding water in the Nesco - great idea.

I feel for you, worried about military kids. My son's only 13, but has wanted to be in the military since he was 5, currently a cadet in Civil Air Patrol. When things get stirred up I think "is this a war my son will be sent to?" 💞💞💞
