Ingredients:
560g / 19¾oz Strong white bread flour
320g / 11oz Lukewarm milk around 40°C / 105°F
1 large beaten Egg: at room temperature
20g / ¾oz / 1½tbls Vegetable or Olive oil
30g / 1oz Sugar
1½tsp Kosher Salt or 1tsp Table salt
10g / 2½tsp instant or active dried yeast, Fresh yeast is 20g / ¾oz
25g / 1oz of melted butter for glazing
Baking tin/pan, these are the inside measurements:
12"x 8"x 2" or 30cm x 20cm x 5cm

Just made these but I turned them into 6 mini loaves by putting 3 'logs' of dough into 2 loaf tins. they came out Perfectly but needed about 5 minutes more in the oven. give or take. This is going to be a household favorite for the rest of my life! thank you John!

It never occurred to me to warm the bowl, but it makes perfect sense! They look Devine. Tomorrow would be a good day to try out this recipe, I’m going to bed now, just had to watch this first.

Made these today John. They came out great! I've been fooling around with some different baking ideas, so far I love your presentations the best. I'm a retired mechanic, not a cook, but thanks to your videos, I am learning. Best tip of the day was to heat the bowl!!! This dough rose better than any I have done thus far. Has to be warming the bowl. I appreciate the fact that you add all those little tips. For us beginners that information is invaluable! Thanks again. Sorry for the long post.

WOW Chef John all I can say is thankyou so very much, I have tried quite a few bread roll recipes by others and not successful, even though the stages were followed. I came across your dinner rolls by accident, made them and well the best rolls I have ever had. They came out exactly like yours and I put the butter on top and they were delicious, all gone, that's when I know they were good.

Done these today John. I used around 3/5 strong flour of a well-known brand, beginning with A and around 2/5 very strong flour of the same brand and with 14% protein as I’ve heard you get a better rise with more protein and also their Easy Bake yeast. They came out beautifully; so very well risen and worthy of of being sold at any bakery. It’s a thumbs up from me👍

I have been trying many of your recipes, especially the ones for bread and they have all been great. This one, however, is amazing. The rolls turned out SO soft and delicious. Absolutely first class recipe and so well explained and demonstrated in your video. Excellent.

Very kind thank you. Just a little extra information to help you along if you do try these baguettes. Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. John, Giant good news. I made it. 8" round pan is the one-third proportion of your receipt. To all of you, stop just reviewing, roll up your sleeves... follow every step carefully.. The naughty me has done them and find it easier to make the rolls than the baguettes, ate them with Nutella. yummy.

Hi John, I could smell them lol. Want you to know I made the butter and froze the sticks. It's yummy, funny thing is I hated butter when I was a kid, hated the taste so I used to embarrass my mum by asking if it was butter or margarine lol. Take care Maureen

Hi Maureen, thanks for watching once more, I was from a big family, and when times were difficult back in the mid 50s my parents could only afford margarine, I remember it was called Echo Margarine, and it really was horrible, but very cheap :o)

once again a great recipe John. These got me thinking about saffron and currant buns.....not sure what the recipe is for those but I suspect these could act as a base. They also made me think of a Lancashire barm cake in texture but I've no idea what the recipe/technique is for those.

Hey John! I made your baguette recipe and after 2 attempts, I had beautiful baguettes. Now I'm ready to tackle your dinner roll recipe. I have a couple questions before I start; Can you use a glass baking pan, instead of metal? And, can you make these ahead of time and keep in the fridge until you're ready to bake? Thanks much...

Thanks again for watching Scott, yes you can use glass ovenware. I have never been a fan of leaving dough in the fridge, it's never the same, much better to bake them fresh, if you need to you can freeze these.

Yes, absolutely Ian, 4g of VWG to every 100g of plain flour.

John Kirkwood would I have to adjust the amount of flour because the VWG will increase the amount of dry ingredients, or should I add extra wet ingredients. The bread from plain flour was pretty awesome

Just making a batch for lunch. I make the soft sandwich rolls twice a week for grandson. He is now taking them for his school lunches. Until I watched your videos for the first time 7 months ago, it would not have occured to me to weigh the liquids! (I've had digital scales for years, so that was never a problem.) Everything turns out perfectly and the films are a joy to watch. Thank you for all your hard work making them.

John I didn’t listen to you and I used cold milk! It took 2 hours for the first rise 🤣 Also I’d like to thank you about the fan assisted oven tip. Mine is also fan assisted and I didn’t listen and set it to 180 but my rolls came out a little dark so I’ll try it on 160 degrees next time. They smell glorious! My sister heard you playing while I was in the kitchen today and now she says to me ‘are you listening to that David Attenborough of Bread’ 😂 Thanks John, much appreciated next week I’m trying the Eve’s pudding.

John I have tried this recipe and I don't know where it's gone wrong. I have never had a failed bread recipe before. They were fine until I proved the dough in the oven. When I took them out to stand on the bench for 10mins before cooking, they looked splendid. When I went to see to them after the standing time I was astonished. They had deflated and looked all wrinkled. I decided to try to cook them and they are like biscuits. They are in the bin.

Over Proofing is the most common cause. If the dough is allowed to rise for too long before baking, it can overproof. This means the yeast has exhausted its food supply, and the dough has expanded as much as it can. When baked, the rolls may collapse because the gluten structure can't hold the gas bubbles.

I've recently discovered that my oven has a "Proof Setting" which keeps the temperature at about 32C. I suppose I should use that instead of the other proofing methods. What would you advise? Thank you!

I like to keep the temperature around 21°C so it doesn't have the chance to over proof.

I made these dinner rolls today and they turned out wonderfully. However, I have a couple of questions and hope you can enlighten me. I do not use plastic wrap and missed it in the video if you explained what "oiled" plastic wrap is. Can you tell us why you use plastic wrap for these rolls, and how to oil plastic wrap? In the meantime, I just used a proofing cloth as usual, and the rolls turned out beautifully anyway. The tip about heating glass bowls and basting the finished rolls with butter were excellent! Thanks much.

I have enjoyed watching many of your bread making videos thank you for sharing. I would like to make these rolls but would like your advice on how to create a crusty top. My partner likes crusty bread always eats the ends of the baguette with his meals as the ends are crispy. Are these similar to Scottish morning rolls/baps? TIA edit to add I like your little oven and much better to have a door that opens like a door and not a pull down. I worry I may break my oven door glass when trying to get water over lava rocks in tin at bottom of oven. Could you tell me the make or similar? Thank you so much.

Tried plain flour with 4% of the flour weight replaced by VWG & they came out very nice, not bad and Aldi plain flour is 45p for 1.5 kilo which makes them very reasonably priced.
