I'm going to be honest with you , Mr Kirkwood. I don't have the faintest idea what I'm doing when it comes to baking bread. I think I would probaly set my house on fire if I had to try. But I do have severe anxiety and by watching your videos , I find that I am able to relax and unwind. Your videos accomplish something that even years of medication could not. Thank you.

I really hope you try some simple bread recipes. John Kirkwood's are good! I turn 65 this year, and have only been baking since 2013. I now buy yeast by the pound, freeze the bulk of it and keep a jar in the fridge. It lasts for years (but I use it up faster than that) I always have yeast, and it costs less than 10 cents for the yeast for a loaf of bread. And homemade bread is so delicious and satisfying. I have made many ugly loaves of bread , but only a couple of outright failures. My best tip is use a thermometer for the water or milk, don't go over 110 degrees Fahrenheit. If you do not kill your yeast, you are almost guaranteed tasty bread. Best wishes from Orla in Michigan, U. S. A

I made these a couple days ago. So easy and delicious. Thanks, John! My eldest says they taste just like the samoon he used to buy in an Iraqi bakery in Chicago. Tips for those whose pitas don't fully inflate: 1) When you turn it to the second side, once it starts to inflate a bit, if inflation seems to stall, press lightly on the bubble with the flat of a spatula. Don't press it down, just hold it so that spot can't rise higher-that will force the steam into the other areas of the pita so it'll inflate fully. 2) Check your skillet's temperature-it can decrease significantly after a couple pitas, so let it come back up to the correct temp again.

I am so glad to find your well demonstrated pita recipe. I have been purchasing the bread for years thinking it was too difficult to make it at home even though I have enjoyed bread making starting in the 1970's. Your instructions couldn't make it easier and the outcome of the product was surprising. You were correct, way better than store bought. I even added leftover sweet potato puree to the dough and filled the pitas with sliced turkey the following day from our Thanksgiving dinner. I'm sure there will be other ideas to come since I make this at least twice a month. Thank you for providing the foundation.

I think it's because, while the dough is on the skillet, some of the bubbles underneath get burned, so air gets into these little holes and the bread remains flat. What could be the cause of this in your opinion?

Sounds like your skillet is a bit too hot Luca, it's all about trial and error mate, the secret is to write it down once you get it right, hope this helps my friend.

I just finished making your Pita Bread recipe and I was amazed at how great the recipe turned out. Your directions were fantastic, the only thing I did different was to add about 120g. of whole wheat to the AP flour total and it was a success. Thank you for your videos....you have taught me a lot.

It's therapeutic to make bread, I find. I eat pita bread everyday with hummus and falafel. It's an addiction 😊

I know this is an older video but I made these last night, tho I have to admit I added some extra flour, it just wasn't coming together. Anyhow, it was still very hydrated, and when I cooked them up they turned out great! Soft, chewy, separated nicely. Really good. Thanks again 👍

Great recipe, John 👍🏻 I didn’t have a cast iron pan, so used a le creuset enamel pan, which I thought was similar. I also cooked half the pitas in a very hot oven, on a hot stone - 4 minutes each side was enough. The result - more char in the pan, but more puffiness in the oven 🤷🏻♀️ Love your recipes!

I've been following a few of your bread recipes of late (your no knead loaf and the sandwich loaf have had a few successful outings so far!) and I was chuffed to see you had another great video showing how to make these. We love a homemade kebab sometimes but my husband complains the shop-bought pittas are too small compared to the ones he used to get from his favourite takeaway so I'll give these a go and see if that will keep him happy! :)

Love the recipe! As a Greek I have to point out that there are two different Pitas. This Pita Bread which you fill and which in Greece we actually refer to as Cypriot Pita, and the Pita Wrap which is the one traditionally used for souvlaki. Slightly different ingredients (Pita wrap has milk in it and does not puff up) but both delicious. I regularly make Pita wraps, but I will now try to make the Pita Bread as well. Hi again John. Before the simple farmhouse loaf, I made these pita breads. All good except the first 5 turned out as closer to naan bread in that they didn't puff up but the last two were spot on. All of them, "naan" and pita taste great. Successful day.

I have watched loads of your videos mainly of the types of bread you have baked so so easy to follow definitely will be making the pitta breads they really do look fantastic. I have started baking bread have made granary an white tin loaves wholemeal is up next this Sunday have got a packet of 4 seed mix to add to bread. We find for proving the dough is to turn our gas oven on at S setting just a bit lower for first rise place dough in bowl cover with cling film an put in the grill compartment directly above the oven then for second proving leave bread uncovered in grill compartment this time a clootie dumpling cloth goes onto a baking tray which then gets boiling water poured onto it and placed below the bread in the grill compartment half way we pour more boiling water onto cloth which keeps dough nice and moist through proving. The method I use to get a crust on bread is to use a baking tray placed near bottom of oven an throw a few chunks of ice on tray find this gives a fantastic super crisp crust which in a couple of days time makes the best toast we have ever eaten
