I find Dio's depth to be delightfully understated. Remember back to the fight on the boat, after all the years being tense enemies with OG Jojo he still found a way to respect someone he completely despised. He told his servant not to underestimate Jojo, and sure that's probably just recognizing how strong the guy is: It's just nice thinking it was a little more complex than "I just hate you like everyone and everything else". In a way I think the two saw each other like brothers. Like the times when I was little and I'd fight and feud with my brothers as a child except blown out to a whole young adult life span.

Funny thing is, DIO actually gave an explanation in a roundabout way why his time stop seems so long. He says something along the lines that "I can stop time for five seconds. But since time has stopped, who can say how long a second lasts?" It's also implied that he perceives the time stop lasting longer because he's a vampire, a naturally timeless being. So to DIO, five seconds seems to last longer than it does later for Jotaro once he gains the ability to stop time.

The reason Johnathan didn't do anything before he got grown is because George Joestar, his dad, didn't ever believe him when it came to Dio and everything he did because Dio was that crafty. George getting sick allowed Johnathan to investigate, get the backup he needed and then catch Dio in the act like what ended up happening. Also, Johnathan didn't have any friends especially after his dog got killed and he got his butt whooped in front of everyone.

Dio was very manipulative and knew how to manipulate George well. I don't think he saw the knife on Dio's hand when he and Johnathan were fighting. If he had, he would've been the one to kick Dio out back then instead of when Johnathan did it. If Dio had been kicked out then and killed the dog afterwards, they would've figured it out easily. It's why Dio had to steadily poison George and make him think he was just falling ill from his age. Dio didn't take into account that Johnathan wasn't a dumbass. I'd say George was unaware since a lot that happen with Dio & Johnathan didn't even occur at their home (Dio beating the hell out of Johnathan for no reason at all, forcibly kissing Erina, etc.).

Needing evidence is for things on the level of criminal activity. Not for your kid who would tell you what's going on if you listen to him. The reason why manipulation works is because of lack of communication. Johnathan understood his dad far better than his dad understood him. Which is sad when you think about it because if his dad had been willing to listen, then Johnathan would have had some stability despite Dio being full on crazy and spiteful. This whole situation is fiction (thank goodness, Dio does not need to be real) but it is based on real life. There are parents who do not listen to their kids and the situation gets worse.

I know we can be tempted to see Star Platinum as a big punchy stand that also gets time stop powers But, to my understanding, the explanation would be that SP the stand is the power to protect Jotaro Notice the way it jumps into action to save him automatically, Jotaro's stand doesn't require his intervention to protect him I'd think as 'the power to protect Jotaro', perhaps just like star finger and his observation, this would explain why in a fight with Dio's "The World" He would also be able to respond in stop time to defend himself. There's also the 'the world over heaven' stand we see in that video game and Jotaro's stand still responds in the same way to power up and protect Jotaro. It's possible that no matter what Dio's stand was going to be that Jotaro's Star Platinum would match dio's ability with one of it's own as long as it's absolutely necessary. To my knowledge though, there's no canon reason to believe any of this is true and as far as we know Star Platinum was always going to be able to stop time he just needed the opportunity to realize it and utilize it.

The theory works perfectly if you stop at Part 3. Unfortunately, it falls flat as soon as you hit Part 4. Jotaro doesn't NEED the ability to stop time anymore but still has it. Furthermore, with how many new enemies he's faced in Parts 4 & 6, SP should have gained new abilities at some point if its power was literally to protect its user. So yeah, really cool theory, and I really wish you were right, but it's literally impossible.
