As a Bulgarian myself, I can say lyutenica is authentic Bulgarian dish with so many different variations as many households there are in the country. You can substitute the aubergine with carrots ( if you don’t like aubergine), or even using both. You can add cumin or just parsley, you can make it fine blended or more coarsely ground, you can make it very thick ( like tomato purée), or runnier ( like a sauce), also for different varieties, you can add white cheese to it, or slightly cooked chilli peppers.. Try them all and enjoy!

As a Bulgarian I grew up with homemade lutenitsa. But in our home we dont put garlic in it. Meat balls with lutenitsa and white bean and onion salad is a classic we could not resist

In Romania we call this zacusca, many do that for winter. But they also add onions, fried together with the grilled veggies.

Aaaah lyutenitsa!!! Лютеница in Bulgarian! I love this spread from my home country. You can also add just a bit of spicy peppers (any variety you like) to give it a bit of spice. That is my favorite type. And the best way to eat it from my childhood - spread on a freshly baked slice of bread, topped with crumbled feta! ❤❤❤

This must be a hell of work buy worth a million. One needs to have patience and passion in order to do. When you showed us the women of the village doing it collectively, it reminded me of a video that I had watched, women and men making Kimchi in a remote mountain village of South Korea. My guess is 30 cloves in the bottle before you took out the 18. What a wonderful tradition to help each household make this for the winter and solidify the community. Thank you Refika for sharing our Bulgarian traditional Lutenitza. As the folks below mentioned there are a variety of recipes across the country. Let me share mine: I always take out the seeds of the peppers before I bake them - it is easier after that ;), I also add carrots as a natural sweetener, and at the end, I add cumin, basil, and thyme and these 3 actually do the magic ;).

Hi Refika! I've been watching you with pleasure for years. Thank you for sharing a Bulgarian recipe! I want to add that eggplant can be omitted for people who can't eat it. In many areas we do not roast the tomatoes. They pass through a tomato grinder, but this way the cooking is longer. We also first clean the peppers from the stalks and seeds, then roast and peel them. It's easier. Also, no one puts oil at the end, but maybe it tastes better that way... There is a variant with cumin, but I don't like it... My grandmother used to put boiled carrots and potatoes - the irreplaceable taste of childhood🍅🫑🍆🥕🧅🧄🥔👍

56 cloves. Thank you Refika glad to see you again. I made something similar but I froze it in bags for later use. I roasted all in the oven. Because of pests I used green peppers and red. I am grateful for you and the recipes you share. God bless humanity. I bless humanity.

We're not familiar with this kind of preserve but it looks so delicious. We read a few of the comments and notice some suggest adding onions and/or spicy peppers, so I think that's what we'll try. Balkan smell of autumn is liutenitza. Anyway put some butter on a slice of bread, some liutenitza and break white cheese on top, could as well be my final meal.

Hi! :) In Serbia, we are also making Ljutenica. But just a little bit different: we add some hot green paprika chopped in small pieces and parsley. And, we are cooking it with sunflower oil. And we love it! It is great!

Thank you for this recipe, in Romania we have the zacuscă , which is very resembling , we don’t put garlic in it. It is very good . And yes, I think it will be a hard winter , the car making industry here in Romania is suffering already 😢. It is very stressful.
