As a Bulgarian myself, I can say lyutenica is authentic Bulgarian dish with so many different variations as many households there are in the country. You can substitute the aubergine with carrots ( if you don’t like aubergine), or even using both. You can add cumin or just parsley, you can make it fine blended or more coarsely ground, you can make it very thick ( like tomato purée), or runnier ( like a sauce), also for different varieties, you can add white cheese to it, or slightly cooked chilli peppers.. Try them all and enjoy!

As a Bulgarian I grew up with homemade lutenitsa. But in our home we dont put garlic in it. Meat balls with lutenitsa and white bean and onion salad is a classic we could not resist

Aaaah lyutenitsa!!! Лютеница in Bulgarian! I love this spread from my home country. You can also add just a bit of spicy peppers (any variety you like) to give it a bit of spice. That is my favorite type. And the best way to eat it from my childhood - spread on a freshly baked slice of bread, topped with crumbled feta! ❤❤❤

Let me share mine: I always take out the seeds of the peppers before I bake them - it is easier after that ;), I also add carrots as a natural sweetener, and at the end, I add cumin, basil, and thyme and these 3 actually do the magic ;).

Hi Refika! I've been watching you with pleasure for years. Thank you for sharing a Bulgarian recipe! I want to add that eggplant can be omitted for people who can't eat it. In many areas we do not roast the tomatoes. They pass through a tomato grinder, but this way the cooking is longer. We also first clean the peppers from the stalks and seeds, then roast and peel them. It's easier. Also, no one puts oil at the end, but maybe it tastes better that way... There is a variant with cumin, but I don't like it... My grandmother used to put boiled carrots and potatoes - the irreplaceable taste of childhood🍅🫑🍆🥕🧅🧄🥔👍

Hi! :) In Serbia, we are also making Ljutenica. But just a little bit different: we add some hot green paprika chopped in small pieces and parsley. And, we are cooking it with sunflower oil. And we love it! It is great!
