That’s quite a trophy she’s got there! Well-deserved, we know this! And a “slug of olive oil” takes on a whole new measurement for me! 😅 i love listening to her talk! Something about her accent or word usage as well as the tempo. Beautiful! One of the best parts of Pasta Grannies episodes is looking at the decor, kitchens and especially the jewelry and clothing they wear. I often watch the episode twice, once for the food and the other for the background, which is always beautiful hills, gardens, animals, pictures & paintings and of course the beautiful grannie herself! Love this channel so much!

my grandparents are from Gaeta as well as the whole neighborhood I grew up in in east Cambridge MA. We had many different types of tiella. My favorite was the calamari.

Mafalda is another delight on your channel. I truly enjoy when the chef gathers her own ingredients at local markets. Mafalda even has a source for fresh yeast from a commercial baker, local olive oil and those fresh greens! She speaks so lovingly of her mother in law. Mafalda is one great cook and a beautiful soul. "Tiella" is a common word in numerous southern Italian dialects! It is an umbrella term, which generally indicates a pot or a pan depending onthe region. It comes from the Latin word "Tegella", which means, in fact, container (the tiella in fact "contains" the filling within the dough) 😊

caro paul, complimenti per il tuo italiano. mi permetto, sperando di non offenderti, di fati notare tre cose per migliorarlo ulteriormente. 1) mi piacciono (le tielle sono due, per cui devi usare il verbo al plurale); 2) sembrano buone entrambe (l'aggettivo e il pronome sono al femminile - tiella è un sostantivo femminile 3) il pronome messo alla fine suona più naturale).

Sto imperando da cinque anni, ma è molto difficile quando la madre lingua è inglese - non abbiamo parole maschili o femminili, anche i tensi (come conjuctivo) mi fa pazzo! 🙂 Nonostante, è ancora il mio sogno per avere una casa in Sardegna quando sono in pensione, quindi sto imperando ogni giorno 🙂

What fun! Mafalda is my favorite shape. It holds on to sauce and cheese so very well. Sometimes, I use mafalda pasta in the place of large noodles. It holds on to the sauce and cheese so very well! My only granddaughter is here for a few weeks I think that tomorrow I will be a Pasta Grannie.

Lovely that you’re sharing tiella with us! It’s a treat. I wouldn’t know which version to pick either! Some cooks put raisins in their tiella di scarola, in addition to the olives. There’s also a version with baccalà.

So lovely! I never thought of cooking salad. I'd love to try this recipe. It reminds me of my mums "stuffed pizza": In a yeast-dough there she put fish and many onions and sunflower oil. The onion with the fishjuice and fat was my favourite part! 😋(It was a Russian recipe.)

Castle at 0:56 is in the town of itri about 10-15 minutes away from gaeta. I been several times and instantly recognized it. My aunt, who lived in itri, used to make it for us along with many other dishes in the brick oven she had in her basement.

"Tielles" are a utmost popular dish in Sète, south of France, where I live ! They are little octopus pies with a saffron and tomato pizza crust, designed by various immigrants : the ragu typically has harrissa in ! It's incredible. I'd invite the Pasta Grannies team on a tour any day. A lot of italian-descended families now own the most successful "tielleries", perpetuating the craft ♡
