Keep in mind, the farmer wants the grapes to be as sweet as possible, but not for the sake of the wine drinker. It's for the yeast. The wine maker wants as high of an alcohol yield as possible. More sugar = more alcohol

that's right. however, the percentage of produced alcohol depends on the tolerance of yeast. if the yeast can tolerate 12%, it will produce up to 12%, but more than that will kill it. the most tolerant yeast produces around 18% i think. if there is too much sugar, it will stay unfermented, and to further increase alcohol content, it has to be distiled. soem producers kill all the natural yeast and bacterias in wine, and then add their own special yeast. when making wine, i once added a lot of sugar into it, wanting more alcohol percentage, but ended up making it overly sweet and also carbonized - a champagne :P

0:28 wrong, because the grape harvest is riper does not mean the wine is sweet. You get sweet wine when the ferment stops naturally or through intervention with remaining residual sugar. Riper grapes typically translates into the alcohol level within the wine. Also, the time lengths for ferments is an average, some can ferment quicker or longer depending on many variables.

Nick jackson In one instance they're actually right. A "late harvest" wine is one made with grapes that have spent so much time on the vine beyond the regular harvest, they have more or less turned into raisins. This concentrates the sugars in each berry and results in a comparably dry must. When this must is fermented with traditional wine yeast, the yeast die off due to the alcohol level getting too high, before getting a chance to consume all the sugar. There are certain yeast strains that can survive a higher alcohol content but a higher ETOH does not always mean a better wine.

Fermentation is exothermic. Depending on the size of the vessel, temperatures can easily reach levels that will stress the yeast. Generally speaking, higher temperatures are good for red wine for extraction of flavor and color compounds while lower temperatures are better for white wines for retention of fruit aromas.

Depends what you're drinking. It's like asking "How fast does a car drive?" If you're drinking a fortified wine then it could at your table in a matter of weeks....or it could also be aged and only reach you in a few years. If you're drinking something dry like a Cabernet Sauvignon the aging time in cellar would depend on the tannins and acids present in the grapes. It can also vary from year to year. Some harvests age better than others.

to answer the question, there is really no problem in doing so without gloves, the fermentation process happens because of a bacteria, any other bacteria that may get to the wine will be killed by antibiotics released by the main fermentation bacteria or starve without the essential sugars because the main one consumes them too fast, and if a virus got in, it would infect the fermentation bacteria and the alcohol level would be too low so the wine would be discarded. resuming there is no real harm in doing so.

Eeeeehhh, you're not wrong, but you're not right, either. there are bacteria that can live in alcoholic, acidic environments, so that's not it. But that's not my point. The wine will be clean enough to be a finished product after the filtering process and what ever little preperations are left, depending on the kind of wine. The filters will catch any imperfections and bacteria in the wine on a microbial scale. The employees will filter the wine multiple times, getting finer every run. That's how i do it at work, anyway. That guy sticking his hand in the wine really doesn't mean shit, since it's getting filtered anyway. I agree, all these people watching this video and not knowing what they are taking about. Isn't it safe to assume that the man probably washed his hands before? Makes me really question everyones higene.

@@ionutandanuta7607 very good. But please do not mention Georgia so badly (unfortunately, I did the same in the past). I have a Georgian friend who talked about this country and they were absolutely different, in a very good way. Germany also had Hitler but that does not mean that Germany is a bad country. Probably, the ridicule they receive is enough for Georgia, because it is located in the Caucasus.

He would have had to have washed his hands before doing that. But even then it still has to go through a pressure filter that filters out anything on a microbial level, so it really doesnt matter. The wine they are making is clean assuming that they dont screw with it after the filtering process. Hope that made some sense.👍

Did you not know that wine contains alcohol which kills bacteria...? Did you not know that because of the CO2 building up, the layer it creates is almost impenetrable by bacteria. So if not sterilized by alcohol, when bottled (if sparkling) the CO2 protects the wine from anything as well. This is very sterile process. Gloves or not.

Rich people making it is called: "Liqueur wine" poor people making it is called: "moonshine wine" It's illegal for one to do it, but its legal for the other one to make the cash...🤔
