I've actually done some research into lightsaber whips from the EU (or lightwhips, as they are called), and technically they are not lightsabers. Lightsaber hilts are constructed around a single crystal and are specifically designed with a cell structure to emit a solid beam of light, whereas lightwhips are multiple crystal shards chained together, similar to the cat o' nine tails, and they do not have this cell structure. On top of that, lightwhips are also incredibly rare due to the skill required to use it properly, and it's also not as strong as a real lightsaber. I think the only reason they can be used against lightsabers at all is if the wielder has enough mental discipline to create a "Force shield" around the end of the whip, which is a precedent that has existed for a long time (Tales of the Jedi comics from the 90s).
