When my son was younger he always wanted to help too and would make his own cards for grandma and uncle's. He's now 26 and doesn't make cards any more but he still likes to see the ones I've made or puts his two cents worth in.

I have the American Heart Associations cookbook and that has good information in it. Also try the Moosewood cookbooks. Molly does a lot of baking. I've lived on a very healthy diet my enter adult life. Once you make the adjustment, it gets easier. Beautiful card. Love your little helper boy. thanks as always for sharing.

True Story: My best friends dad had some health issues. The doctor told his girlfriend that he absolutely needs to stay away from red meats. To which she replied to the Dr. "He doesn't eat red meat, I cook all his steak well done". She was dead serious. My best friend had to explain it to her. Beautiful card, Kelly! We use Swerve for a sugar substitute in our baking. Also almond flour for crusts or nuts. Swerve is a 1 for 1 measurement too so if it calls for 1 cup of sugar, use 1 cup of Swerve. :)

Beautiful card, with amazing colors! I’m pre diabetic, decided to do Keto diet. Low carb and no sugar. I use swerve when I bake or on deserts. Look at some Keto recipes for dessert. The bag says it measures the same as sugar 1:1, but always taste. 😋

I'm diabetic...my advise is...make your regular recipe. Limit the serving size. Make mini cupcakes, and give Dad one delicious dessert. Love your card and videos.

I love this amazing card! I am Keto so I barely do carbs/sugar and most of the good dessert recipes use almond flour (coconut flour tends to be too dry for my taste) and erythritol (sugar alcohol) is my go to sweetener and same consistency of sugar. It’s amazing and I’m super sensitive to flavors.

Bright, bold colors. I love it. I like the Copics over Zigs. I don’t use my Zigs enough - I think the Zigs are a bit garish. The Copics change the tone a bit so they are bright but not harsh. You used the Zigs very effectively for the background. I’ll have to try it. Thanks, Kelly. I enjoy your cards and stories so much. I really don’t mind the long videos at all. It feels like a girlfriend coming to chat.

I use Wellbee’s superfine almond flour; Lakanto Monkfruit natural sugar substitute. Check conversions on recipe for Almond flour vs wheat (sometimes it’s the same but not always, may need other additives.) And the card is beautiful as always!

Awesome card Kelly. I love cooking and baking also and it was in the days that I worked a real stress reliever. My daughter also loves cooking and baking from the day she could sit in her high chair in the kitchen with me. So nowadays we sometimes cook together or she prepares dinner and that is a nice change. Beautiful card and coloring! Peanut was the man the way he leaned on the Misti!🙂 My daughter said she uses Stevia for baking...they apparently make some for baking. My sister used to use Splenda but that was about 3 years ago so not sure how it works now! Good luck with finding a good recipe!

1st love the card, 2nd..the only frozen veggie my Mom used was the corn we did every yr( bushels & bushels of it..OMG)everything else was canned... I only eat frozen or fresh veggie's now. For your Dad look into the Keto Diet..low carb, low sugar.. they have lots of free recipes, including desserts!

Awesome card Kelly. I’m sorry i cannot help with the recipes, but i can relate as baking is my ‘other passion/stress reliever’ also. My Dad had throat cancer initially, so i can relate to the heartfelt frustrations of trying to re-educate parents with foods and eating to suit the needs of their changing bodies. My heart goes out to you and your sisters. Sadly i have just lost my Dad, so persevere, keep trying, i am sure he and your Mum will appreciate your efforts, eventhough at times you may feel like they do not. It is so difficult for everyone, but you will all be closer for it. T💖💕

I’m telling you these are so good. I have to watch what I eat for heart health and I use coconut oil instead of ghee. But this recipe is awesome. Avocado Brownies 1 large avocado 2 eggs 1 teaspoon vanilla 1/2 cup coconut sugar 3 tablespoons ghee, room temperature (coconut oil or butter works too) 1/2 cup blanched almond flour 1/2 cup cocoa powder 1 teaspoon baking soda 1/2 teaspoon sea salt 1/2 cup chocolate chips Preheat your oven to 350F. Place your large avocado, eggs, vanilla, coconut sugar, and ghee (butter or coconut oil works too) in your food processor. Process until it’s completely creamed together. Add the almond flour (cashew or hazelnut flour works too), cocoa powder, baking soda, and sea salt to the food processor. Process until completely combined. Add the chocolate chips and pulse a few times to get the chocolate chips incorporated. Line a square pan with parchment paper. I used a 9×9 inch pan, but 8×8 inch will work too. If you’re using an 8×8, you’ll get thicker brownies and may just have to bake them for about 5 more minutes. Pour the batter into the pan and spread it out evenly. Sprinkle with additional chocolate chips and bake for 17 - 20 minutes until the top is set and it bounces back when you gently touch it with your finger.

I use baking Splenda which is a cup for cup measured. If you need 1 cup sugar I use 1 cup Baking Splenda. It seems to make a difference in how my final products turn out. It is like the recipient needs the extra um, whatever to help with then density.

The hubby recently had a health issue that put him on a low carb, low potassium diet. I wanted to make the transition easier and did a lot of research and found a site called Netrition that carries a lot of great low carb and diabetic options. This is where I buy Our sweetener of choice, which is Swerve. Hope your dad’s health keeps getting better!

Stevia is bitter use Splenda for baking. Splenda for baking tastes more like sugar and measures the same as in regular recipes. There’s two different kinds one says on it Splenda for baking and one says just Splenda. So if you’re using it for baking recipes get the one that says Splenda for baking totally different taste then the other one. You can also find it where it is granular like sugar. Hope that helps

My mom and a few more people in my family have diabetes. She is a great cook but works only with made up recipes and I don't think she's used Stevia before, but I'll ask her. I don't know if it helps you but I used to buy her sugar free cookies and biscuits at Walmart when I worked in the US and she loved them. I love, love, love the card btw.😘

Kelly how do you keep the inside of your stamp clear of ink before you stamp out the image???? Every time I do it I end up with ink everywhere on the stamp

if you are getting ink on the inside of your image you are pressing your ink pad too hard onto your stamp...just do light taps on it..if you can see the ink on the stamp you are good..if you use a stamp positioner, if you miss a spot, or dont get good coverage, you can stamp again(this was the best investment I ever made in my crafty stash!)

I just want to make sure I'm understanding the question. By the inside you mean the inset part yes? If we're on the same page here it could be two things. 1. Some cheaper stamps are made overseas and they are more shallow. I had a company send me some stamps like this and there was nothing I could do to avoid getting ink on the inside. 2. Is exactly what Denise said, you may be pressing too hard when inking. In order to ink just tap with your ink pad with has much pressure as you would pat a baby's back to burp them or pet a dog's side. It should cover your stamp nicely.

My husband and I switched to a whole food plant based diet after watching my uncle get completely off his diabetes and high blood pressure meds by eating this way. For desserts we sweeten with things like dates (sounds gross, but you can't taste them), maple sugar and sometimes coconut sugar. Though, coconut sugar may be still too much for a diabetic. Dates would probably be the best option.
