The wood whisperer just posted a video about his recommended food safe finish for butcher block and he chose Tung Oil but no finish on top. He did some fairly scientific testing and you may want to watch it. Keep up the great vids!

Thanks for that! We almost left it unfinished with just the tung oil but needed to it be non-porous given the conditions under which we are using it!

I truly appreciate your caution with installing the windows and doors. I installed windows, sun roofs and roof vents on 2 dodge vans i previously owned. Man that first cut is really scary. Basically I did it much the same as you did. Sure was great to have help. Looking forward to see your adventures when its complete.
