About the fried chicken, the recipe is flour, onion powder, paprika, garlic powder, cayeanne powder, salt, pepper and the chicken is dipped in butter milk and egg wash. Out of curiosity if I were brazen enough to try this, could I replace the sugar with Stevia or some other sweetener? I know its generally said to use 1/4 stevia to the stated amount of sugar but would that possibly mess up the syrup or react with something else in the concentrate? I kind of loathe all the diet sodas and am tempted to just make my own.

I need a cola without the acids in it and yes I did call Coco Cola and asked them if they could make a cola without the Phosphoric acid and SHE said " we can't do that? They changed the formula years ago and screwed everything up and they can't do this for their customers? Corporate America Sucks. It just does!

I was legit blown away when he said 90 liters. Like... i make root beer at home. And im used to filling like... a pint/half-liter bottle with the syrup, or like, half that amount, before sugaring. And then quadrupling that syrup volume after dilution. So im looking at this pint of concentrate, thinking, "thats fairly expensive for a half gallon of cola..." Meanwhile, its actually for almost 24 gallons. AND it keeps for a long ass time, unlike the RB syrup which keeps for like... 2 weeks, maybe.

Glen, this series on colas has been fascinating to watch. Here's another wrinkle to nailing-THAT-cola-flavour that I think is often overlooked: flavour maturation. About 25 years ago some friends and I analyzed Coke (early/mid 1990s) with gas chromatography and found a number of compounds not covered by the raw ingredients and in quantities far greater than the essential oils could make up. Chief among them was isoamyl butyrate which led us to believe the syrup undergoes at least one (if not several) steps of fermentation. It would be interesting to test the pH and specific gravity of the syrup because I'm betting the conditions are perfect for a lactobacillus fermentation (and the bacteria may naturally occur in some of the ingredients, so possibly no need to introduce a culture). Many of the early soft drinks like root beer were yeast fermented (for both carbonation and flavour) so I don't think this process would be out of the question for Coca-Cola in it's early medicinal and soft drink forms. It would be interesting to compare a freshly mixed batch of the syrup to some that had been standing at room temperature for a few weeks (or even a few months) to see if auto-fermentation takes place. Keep up the great work!

This recipe is great. I tried it and I love it. Better than the original. I think it tastes like a mix of mezzo mix and coke with more depth in flavor. However I had to improvise as I didn't have all the ingriedients. I don't know the exact translation of double strengh caramel colouring so I used the in europe widely available E150c. My cola appears to be a bit darker than the cola in the end of the video. The second mod is 105 ml of guarana kola tea instead of kola extract and water in step2. I used 15g of ground guarana and 10g of ground kola nut. I infused it with 100ml hot (but not boiling) water and let it sit while mixing the emulsion. Filtered it with a coffee filter and funnel after I completed the emulsion and flushed the filter with the missing amount of water in order to get to 105ml. A bit more work than in the recipe but worked for me. I did some math and recalculated the sirup recipe to fit in a 1l bottle. The sugar sirup has a concentration of 64% by wheight. According to some online chart a 64% sugar sirup has a density of 1.3103g/l. I just used 817g of sugar, 467ml water and 20ml of the flavoring concentrate. Fits perfectly in a 1l coke bottle. I was able to mix it directly in the bottle. First add all the water and approx. half of the sugar. Shake until the sugar is dissolved then add the rest of the sugar and continue shaking. Don't forget to use gloves as the water needs to be quite hot for this to work

You should be able to find cane sugar Pepsi bottled in Canada in classic glass Pepsi bottles at Sobey’s, usually 4 for $4.99 in a cardboard carrier. These Pepsis have a totally different taste to the canned or even the “Throwback” variety Pepsi sold in the past. The cane sugar one tastes like what I grew up drinking in the 60s and 70s with a pronounced vanilla tone. Hopefully you can find it before your taste test :-). Totally enjoyed this series.

You can actually emulsify the oils in water if you use a kitchen blender on high for 10 to 15 minutes. I am a bee keeper and essential oils are at times used in feeding and in sprays when combining hive to reduce defensiveness. Also just for curiosity sake 2:1 sugar to water is what we feed up our bees in the late fall before winter after the honey supers are off.

After watching the last several videos and this one with you not only adding all these exotic ingredients but also the mixing methods it started to make me wonder why people started doing this in the first place in the 1800's. More interested in the Cola myself. Unless KFC Canada is run differently and they train their cooks a million times better, it's the same crap they sell in the States. As for the Cola, I'd be interested in sampling the finished product from a GLASS bottle but I'm sure it's too expensive for Glen and Friends to even sell locally unless he starts a business with friends let alone shipping it across the border. Honestly, I am curious about "homebrew" cola. I'm just not gonna make it in MY home because I'm not set up and I'm NOT that much of a masochist! Yeah, I'll leave this to the experts. I've found a lot of the smaller, bottled colas to taste better than Coke or (yuckier to me!) Pepsi. The pesky problem is that sugar content (generally better than 32g per bottle which is VERY high) which can get around 44g of cane sugar per bottle. I have to cut the sugar from my diet as low as possible so it's Coke only once in a VERY long while or if I eat out...

Hello Glen! Thanks for all the recipes! I’m from Guadalajara, México, and it’s right, Jarritos coke is made here in México, but doesn’t sell in here, only for foreign markets. It’s cool to see you love Mexican cokes and pepsis, they actually taste better, and that’s because the amount of sugar added, here in Mexico no long ago that stuff wasn’t regulated by the government. I attempted this recipe today. Spent over $100 on things & weeks of waiting for delivery , but I love Cola. Couldn't get the caramel colouring product from the video, used cheap extract instead. Also bought wrong Kola extract, so skipped that. Overall it has no color bit still tastes like a Cola. I will add Kola extract to my syrup later. Never use a drill in cooking before! Thanks again for the video.

I wonder if that flavoring could be added to ice cream as a topping or something… I can think of two general approaches: Make a syrup to drizzle on top, or make a thicker syrup or jelly to add as a “swirl” in the source container of ice cream. Then, there's always the root beer float approach, but that's too obvious.

I think I found your channel a few months ago while searching for how-to’s on browning butter (which I needed to learn to make brown butter shortbread), was immediately hooked and started tuning in regularly, as well as combing your previous videos. I love it when you share Depression and WWII-era recipes, and when you embarked on your cola series, knew the “coke” reference would help you grow your audience. Hand blender just isn't powerful enough, you need faster and more powerful tools.

The way I understood Glen in the video the drill was needed because it has a much higher speed than a standard hand mixer and that speed was needed to emulsify everything. But I'm curious too if a power drill is actually needed.

I've been making the cube cola recipe since 2012, it's very drinkable. I'm going to have to try your spin. I use less flavored syrup per litre than the recipe calls for, because I find the flavor too cloying otherwise: backing off a bit makes it more refreshing IMO. I do still use the "whisk in electric drill" approach, but in hindsight I wonder if a stick blender wouldn't do an equally good job, and probably faster too. According to what I've learned, emulsion is all about shear, and I expect that a blender provides more shear than a drill. Btw a stick blender also works for mayonaisse.

I tried the stick blender / immersion blender -there didn't seem to be enough liquid to make it work. I also backed off on some of the concentrate to suit my tastes - I agree that it was a bit much at their recommended strength. I think that the vanilla and Kola extract also helped the flavour from the earlier cube/open cola tests I did. Thanks for watching!

I can help you shortcut the KFC recipe. Came from a book that's getting harder to find entitled, "Big Secrets." They, whomever they where at the time, acquired an unopened bag of dry mix from a KFC employee, took an unlabeled sample it to a food chemist to insure compound anonymity, and found it had only four essential ingredients: salt, pepper, paprika, and MSG. That's all. What you ought to shoot for is the ORIGINAL recipe AND the original cooking method, including the fat of choice it was fried in. THAT would be the bomb.

This is all kinds of awesome! I don't drink coca cola anymore since joining the keto wave but the Mexican coca cola has a special place in my heart. Pepsi should never be mentioned in the same breath as coke.

That could be an idea, sell it at a flea market or something. People can bring their own container, Glen could fill them up with syrup and soda water, mix it up, seal it, and slap on a Le Gourmet Soda logo.
