I used two D rings and a piece of string/rope that doesn`t chafe. I`ve even used an old leather western chinstrap. Works for my pony but every horse is different..

Yes of course, but fleece is de DEVEL in my book haha, it will smell more, be static and attract hair like a mf and won`have the same benefits that wool has. Also if you double up ( not sure if that is your plan) you will need to baste/quilt the layers together . In short.. i wouldn`t advise it.

How did you decide size of darts?

I put it on my horse inside out and pinned the excess material. Doing a fitting just like a seamstress would do with people and clothing. If pins and horses make you uneasy 😬 you could also use pegs or clips and mark the fabric with chalk.
