If you only bought one for general knife sharpening which would it be?

If your knives are not chipped to bad a 400 or 600 grit CBN wheel would be perfect. If you plan to do repairs or changing the angle of bevel the 200. I have not tried the 80 grit yet.

Thank you, as I understand they both would allow edge trailing deburring/honing. How did you determine your leather wheel honing angle if it isn’t the same size as the CBN wheels? I took your advice and purchased the CBN wheels you suggested.

@@NinjaKnifeSharpening the leather wheel is 10", same as the Spartan 10" cbn wheels from WoodTurners Wonders. The 10" leather strop wheel was purchased from a different supplier.

@@NinjaKnifeSharpening if you use the same size wheels for sharpening and stropping you may have to adjust up just a tiny bit to help the leather remove the burr from apex. A leather belt on a belt sander is the quickest way to deburr, followed by a leather wood paddle strop to remove any remaining burr. Also felt wheels work very fast for burr removal.

Is it ok to use these with the water in the trough?

These are designed to use dry. Water can get between the cbn and the center piece. It voids the warranty. There are other CBN wheels that can be used with water, not these.

Those crepe rubber abrasive belt cleaners work well for cleaning CBN wheels
