When Carbon Dioxide dissolves in water some of it turns into Carbonic Acid. The Carbonic Acid reacts with the Calcium Carbonate in milk causing the milk to curdle. This uses up the Carbonic Acid causing more to be created from the Carbon Dioxide. What you've essentially done, Phil, is made cheese.
