Just before Christmas, I made a couple of small test batches of wine for myself (Keyword myself). While I was making them, I didn't have a place to store them, so I put them in my closet. Well, on Christmas my family found out I made wine in my closet. After making fun of me for making closet wine, they drank all of it before the day ended. The lesson of the story, find a better place to hide your wine.

I'm going to use the bread yeast, Paw Paw. I'm a guzzler, although I like to put 3 or 4 ice cubes in the glass, as the less potent, the more I can drink. I will be 83 in April, so I don't want to fall down.lolol Everyone in my family has been sick since early January, except me. I don't live with them. They have children and I guess the kids catch it from school and the older ones get it from co-workers. Glad you are feeling better. Your videos are the only ones that make me happy.

our wine is delicious. We used regular bread yeast and made a batch of white grape. It was so good and it made for some awesome Christmas cheer! I’m so glad you’re feeling better we missed you!

Paw Paw, I learned a cool way to siphon when racking by taping a clean chopstick or anything straight & ridged to the end of the hose that goes into the wine container leaving approximately 1/2” to 1” past the hose end, and it will keep the hose off of & out of the dregs at the bottom of the wine/container. Works great!

Hey Paw Paw. Hope you are well my good friend. Finished drinking my first ever paw paw home made apple & black current juice fermented using wine yeast. I followed your recipe to a Tee. I was drinking a 1.25L bottle of which I finished over a couple of hours. During that time I was speaking on the phone with friend. Don't remember much after but waking in the morning to lots of text/voice mail messages of my friend very concerned of my welfare. To cut a long story short I passed out whilst talking to my friend on the phone. My friend was very concerned as the phone went dead and silence from my end. She thought something bad had happened to me. Much stronger than any commercial wine I've drunk before. Making another batch now. Thank you Paw Paw and God Bless!

I made my first couple batches after watching these videos. One bottle with wine yeast I had to go find on Amazon and another with just instant bread yeast I had at home. It's been 25 days now on the bread yeast one and I gave it a little taste test today. Boy is it strong!! Did not expect that at all. I can't imagine how much stronger the wine yeast version is going to be! It's all so simple too. No way am I going to go waste money buying wine from the store anymore when I can be #DoingItCheap from home.

Just drank my first batch of white grape peach wine, it was alright I guess...I was too busy fiddling around with it, that's just my nosy nature for anything new I try, I want to experience the entire process. However, I had a control, a batch of cranberry pineapple going at the same time, and left it completely alone as per your videos. My girl loves it, I love it! Paw paw, first off thank you for your great simple to understand videos. I've been making and playing with your wine recipe for months now. I just had a batch ferment completely dry at 20 percent. If you are interested in trying this for your viewers, here's all I did. Half gallon Walmart brand grape juice. 2 and a half cups sugar. One teaspoon bread yeast. One teaspoon distillers active dry yeast red star (I paid 9 dollars for a pound on Amazon). Just a few drops of lemon juice to lower the pH to help out the yeast. Verified with hydrometer at 20 percent. Keep it above 72 degrees throughout fermentation and whoow. It will knock your socks off my friend. Had to add sugar before drinking due to no sugar being left after fermenting. Keep up the good work my friend.

Paw Paw, I used your recipe with the wine makers yeast to make Apple juice hard cider. It turned out delicious! I did use my hydrometer to measure before and after and ended up with nearly 20% alcohol, and I stopped the fermentation early.

I was told that, specifically, Fleischman's Active Dry is the best bread yeast for making consistent alcohol. Don't use the Rapid Rise or other brands of bread yeast. Some other brands have unpredictable, unreliable, sporatic fermentation abilities, even sometimes stopping at just 5%, while other times reaching 10% and so on. I believe the badmouthing and concerns about bread yeast, are with using the other bread yeasts. Some brewing yeasts ferment faster, reach slightly higher proof, or retain different flavors or colors. If your concerned that Fleischman's Active Dry bread yeast won't have enough alcohol to intoxicate you, that shouldn't be an issue.

Lower alcohol from bread yeast is fine by me. That just means you can drink more of it. 😀 I like using juicy juice to make wine. The strawberry watermelon is especially good for wine. On that note, watch out for potassium sorbate. That stuff should be illegal because it kills yeast. Few things are more frustrating than waiting a whole month for your wine, only to realize it had potassium sorbate in it. The first clue for me was when it still tasted like juice with added sugar. I was so mad.

Paw Paw, you are my inspiration. I’ve been watching for a month or two, and you’ve got me experimenting already! First two were following your recipe to the letter: a cheap Old Orchard Wild Berry, and an expensive ($10 a bottle) POM pomegranate juice. Third bottle was the excess pomegranate, topped off with grape. The last two are two versions of lilac wine (I made it before I saw your lemon leaf video). I also tried a Mountain Dew wine, but it went green (and not in a good way). :) Thanks for the inspiration! The Pom-grape is excellent, the rest are still brewing.

Paw Paw , i made i jug red plum/black cherry , one apple , one white grape , and one regular grape , made it all , December 2nd 2017 and it was ready on Dec. 23 . Had family here for Christmas , they loved it , sold two jugs to 2 of my nephews , and kept 2 for myself . Let me tell ya , all of it was done with bread yeast , and MD 20/20 aint got nothin on me . Lol im still sipping on it , when its gone ill make more . Thank you for sharing this simple recipe . Happy New Year to you .

Wine yeast is a type that can keep living in higher concentrations of alcohol. Bread yeast can’t survive such highs concentrations of alcohol. Bread yeast is meant to create large volumes of carbon dioxide. Wine yeast is meant to create large volumes of alcohol. Wine yeast for the win.

Paw...wow. You must have been one super Santa that year. Well, I am now (1/24) enjoying some Christmas (cranberries/ blueberries) wine. I make juice from fresh or frozen fruits...strain well and use a bit less sugar. 💥😮This wine is very fine...a clear crimson color and almost a brandy. Much better than anything I’d buy. Wish I’d started another batch before Christmas. Have a healthy and strong 2024💥

The winemakers' yeast consumed so much of the sugar, that it is not as sweet as the bread yeast. But that is why is has so much octane !!!

Hydrometer readings are meant to be taken at 60° F. There's a conversion chart for different temps.

I have a handful of fruit trees in my backyard and I've been making wines a few years. I started with bread yeast, but a while back I started using Lalvin EC-1118 yeast. I ordered it online for about $1 a packet. I ferment year-round in temperatures from 35* to 90*. The EC-1118 is the most temperature tolerant I've found, but it also has a higher alcohol tolerance than most. I made a batch of potato-mint wine last year that hydrometered out to about 20-22%. I believe the higher quality of the wine makes it worth spending a handful of nickels more. Keep doin' it cheap!

You can ferment at 35F with this yeast? That is good to know. My basement temperatures get to around 55-57F at night and although that's where I want to do my fermentation, I've been afraid it will stall at too cool temperatures, so I brought everything upstairs. Sounds like I need to get me some EC-1118 yeast.

I'm making wine now paw paw. 2qt jugs, I live up north and use oil heat. The vents are flat on top and can hold 2 jugs next to each other. It took probably 12 hours for the jugs to warm up. They must be 80 degrees now. I shined a bright light on the bottles to see, there's lots of tiny bubbles about 1/3rd the size of carbonation bubbles. I have 2 quarts of apple juice, 2 grape, and a quarter of pure black cherry juice from Walmart which was $5. It's more expensive but if it's good, it's still much cheaper than buying alcohol.

I really enjoyed watching your comparison video since I'm a fellow winemaker. If you ever get the chance try making a batch using DADY your wine can reach 20-22 ABV, definitely strong enough to knock your socks off but more dry than most drinkers would appreciate without back-sweetening. I've got to admit your videos are a whole lot more entertaining than mine you're clearly much more comfortable in front of the camera than I will probably ever be!
