Good video Paw Paw. My Dad taught me how to make wine 50+ years ago. Always in a glass 5 gallon bottle with a cork with a hose in it running to a mason jar 3/4 full of water and all covered in a dark warm spot with a towel over it to keep the light out. LOL Now I'll do some reminiscing of my childhood up to my 20's thanks to you. You're spot on with your method, if people follow your instructions, they wont go wrong. My Dad's favorite wine to make was dandelion, then honey. We'd pick the flower tops in a large paper grocery bag full, boil them in water for the juice to make 4 gallons of hot sterile juice, 10 lbs of sugar, 2lbs of raisins, 1 orange cut up and 1/4 cake of yeast or 1 packet. He would simmer the dandelions for 20 minutes with enough hot water to make a thick soup you could stir while simmering. When it was done simmering he would cover and let it set to cool down so it was cool enough to handle. Rinse the jug out with hot water and then strain the juice off the dandelions, pitch them out, done with the flowers (He may have added more hot water to them and drained to make the 4+ gallon total).Then put everything except the yeast in the jug. he would stir it up good and put it in it's dark place, then add hot water to bring it up to about 4 1/2 gallons. He always held the liquid down about 8-10 inches from the top so any foam wouldn't plug the tube. By adding the hot water last it rinsed off the top. He would let that sit over night covered with a heavy bath towel or small blanket. to make sure it was cool enough to add the yeast, cork it and tube in the water jar and covered up. Rule was leave it covered and never let the jar run out of water. He never had a bad batch. I broke that 5 gallon jug a couple years ago. It broke my heart. But I found another one at a yard sale, LOL To bad dandelions don't grow down here where I live. I wrote the recipe the best I remember. I think I'll be making some honey apple. It's like your recipes on sugar, you just replace 1/2 the sugar with equal amounts of pure honey, not the cheaper fake stuff. and the liquid is apple cider or juice. But I'm gonna try your smaller amount method, 5 gallons seams to weigh a lot more these days, LOL Honey wine uses honey instead of sugar and up to pound of raisins for every gallon. I always add raisins cause Dad did, LOL Here's an old trick I learned to clear up cloudy wine from an old book at the library. I had a batch that settled but wouldn't clear and I waited and waited. So I went to the library years ago before computers were in everybody's house. In this book it stated that egg whites will clear up cloudy wine 3-4 per gallon. So I siphoned off about a quart to mix the 11 egg whites with a blender on low pulses. I wanted a mix, not foam. I only used half of the wine I siphoned to blend it with. Poured it back in with the 5 gal, jug of cloudy wine, the use the rest of the siphoned wine to rinse the blender container and pour back with the rest. I used a clean plastic rod to give it a little stir. I figured if the egg whites will clear it, then they should make it all settle. I corked it back up with hose in the water. It bubbled just a little the 1st day. WOW. in a week it was crystal clear and 2nd best wine I ever made. It was honey apple wine made from cider. The best I ever made was elderberry. The worst was black cherry, the juice was to weak and not enough sugar. I use a brinx meter now to get my sweetness just how I like it. Yeah I like sweet wine too. Not that sour swill they sell in the stores as wine, yuck. I usually add enough sugar to get between 22-24% on the brinx meter. Paw Paws recipe brings it up to 26%, that's 2% increase was only a 1/4 cup more of sugar from the amount I used. So 1 1/4 cups of sugar with 1 1/2 quart of juice that is at 10% on brinx will yeild about 24% on brinx. If you only use 1 cup sugar with the juice it will be only 17%, that is to low. You need at least 18%. The lowest amount of sugar I would ever do with Paw Paws recipe is 1 1/8 cups of sugar to 1 1/2 quarts of juice. I'm only writing about this to help somebody that doesn't like there wine sweet. Be careful on trying to reduce the sugar to much. Do it Paw Paws way. If it's to sweet, only cut it a 1/4 cup and make another batch. Wine yeast will convert more sugar to alcohol and make it a little less sweet than using baking yeast. Paw Paws recipe is fool proof. Some will have troubles with the cork method because they didn't clean it after used, didn't store it in a clean manner, and didn't sterilize it with boiling water. And maybe had dirty hands and contaminated the batch from start or during the fermentation. They really need to follow your instructions. If they could make wine centuries ago in a crock with a cloth tied over the top, it's not that hard. Just leave it alone. Kinda like rice, don't touch or stir it while it simmers on low for 15 min. Leave it be or you will mess it up. I did an edit to change the sugar amounts on the 5 gal., it was 10lbs not 5. And I added the brinx precentages just encase anybody stumbles across one. I've had some moments when I've lost count on how much sugar I put in. The brinx meter saves me, LOL I just started 2 apple bottles, 2 apple honey, 1 cranberry, 1 pomegranate/plum and a mix of the 4 juices. I'm also testing rapid yeast against regular yeast. So in 4-6 weeks I might have a hangover from research, LOL.

Been making this pretty regularly now and I have to say it's been a big hit. I've tried all sorts of variations in juice and sugar amounts and would say that cran-raspberry at about 1.5 cups of sugar is a family favorite. In fact it was so good I got a special request to make a case for my brothers wedding. Thank you for your videos and know that I'll keep sipping in honor of PawPaw. Cheers

That’s great! I’m going to be making my first ever batch over the next few weeks. Will be using Turbo Yeast for increased ABV%. Then I should have strong wine that can be mixed with lemonade, sparkling water etc. May make different flavours with sloe berries and blackberries, as they are currently in season and growing wild. Congratulations to your Brother and his Wife. 😁🙏🏼

My grandma used to make the same wine but I couldn’t remember how she did it until I saw your original video. She always went with the ole saying, “If it ain’t broke don’t try and fix it”. Thank you pawpaw for bringing back an old tradition.

I’ve made about 8 containers of this wine and I have to say that it’s pretty darn good. The first 3 I put 1 1/2 cups of sugar with the yeast and it bubbled for about 2 and a half weeks and then I waited another week and a half and tasted it. I was surprised of how strong it was. The next 5 I used only 1 cup of sugar and it was perfect for my husband and I. We drink wine often and this stuff is better then buying it at the store! Omg! No headaches and taste great! Thanks paw paw for the recipe. I already have my twin sister hooked on it!

I am making 15 gallons of your wine now, I have been doing this for about 3 years now, yes I started small. My friends and family love it. I live beside a winery and our house company always drinks my wine before they drink the winery's wine beside me. It is good stuff. I actually bottle it and cork it and have it on hand year-round. I use 5-gallon carboys and simple air-locks. I use warm water and some clorox to sanitize my containers before use and it is awesome wine without the preservatives and it keeps at least 3 years bottled so not sure why you need all the extra chemicals/preservatives that wineries use. Thank You for posting your videos. I will warm the first gallon, a 1/2 gallon at a time and dissolve my sugar in those and pour it in my carboys maybe heating one more 1/2 gallon to give me a temp of about 78 to 80 degrees to add my bread yeast and it is perfection by not being perfect lol. I have tried so-called Wine Yeast and Bread Yeast and I can not tell a difference so I just use bread yeast for the same result.

Hi Pawpaw, After watching many of your vdeos and a few of other people's videos on making wine I decided to try your method cause I also like doing it cheap. I went to Aldi's for my 100%juice ( grape and apple) and followed your instructions. Waited a month and then racked it once through a fine mesh strainer. Chilled and tasted. OMG, delicious. I could not check the alcohol content but I can tell you it has plenty enough for me. The grape is excellent, the apple still has 2 more weeks. I can't wait to try other juices. Thanks for all your information and from one vet to another, thank you for your service.

PLEASE DO NOT LET PEOPLE TALK YOU OUT OF TRYING THIS. It is a LOT of fun and tastes fantastic. I prefer the price of, the taste of and the success rate of Great Value brand juices. Win/Win/Win. If it tastes/smells bad, it isn't ready or you found out that fermenting that specific juice is not to your liking.

I don't know why people have such a hard time following instructions. I had never made wine before until I saw your videos, followed your instructions and made a bottle using white cranberry/strawberry juice and another bottle using apple juice. Started both a few days before Christmas and it took about 5 weeks before they were done, think it was mainly due to the cold weather we had during that time but they both turned out perfect. I just finished drinking the last of it tonight and I have to tell you, they were both good. I now have a bottle of grape, a bottle of apple, a bottle of white cranberry/strawberry and a bottle of white cranberry/peach going. Can't wait until they are done. I never really drank wine that much but after making my own following your recipe I drink a small glass every night just before bedtime, seems to help me sleep better. :)

I know you said done look but I had too and it’s bubbling, so I can relax and just wait out the 4 weeks. He hee..this is awesome for beginners!! Many other channels just scare people away from even making their first brew. Sanitization? Why when everything is clean in the jug it comes in? And this is exactly how my grandpa taught me to make my first wines, ciders...etc. I even managed to make a cider half by accident because I forgot about it, lol! And it didn't turn into vinegar because the alcohol content was too low to activate acetobacter (around 5.5%), plus it still had enough CO2 to keep the oxygen out. Now that I'm into mead and larger quantities, I do sanitize equipment but I still don't obsess over it. I use an airlock but honestly, mostly for entertainment value. At any rate, all of this only proves that old saying: wine or mead want to make themselves, we just need to get the heck out of the way! :)
@eddavanleemputten9232
@eddavanleemputten9232 Жыл бұрын
Over 30 years of mead making under my belt, branched out into fruit wines and ciders over time. I couldn’t agree more. Patience is the most important ingredient in wine/mead/cider making. No need to over-think. Sanitising stacks the odds in your favour to avoid infection but if the recipient and must are already clean and near-sterile, no need to complicate matters. When re-using equipment, sanitising becomes more important to avoid accidentally making vinegar and to avoid getting mould in your ferment. Shutting oxygen out of your fermenter after the initial stage that actually needs it is important as well for the exact same reason. What kills me is people who rack their product over and over and over again. For chrissakes, leave it be… let that yeast fall out. Why give yourself extra work and lose extra product if you don’t need to? I do use yeast nutrient in a lot of my recipes because it does help with flavour and avoids stalled fermentation but have a heavy preference for keeping things as hands off as possible. It’s not hard at all to make mead, fruit wine or cider. It’s pretty darn hard to mess up. It can be incredibly cheap. As long as you give it time. Know your flavours, be patient, and if patience isn’t your thing, stagger your batches in order to give yourself something to do on a regular basis. I tend to start a small batch each week to every fortnight. Keeps my family and friends in drinks that are roughly 6 months to a year old now. Every now and again I make a larger batch for special occasions and I make them well in advance. Most of my recipes are very simple even when I add extra steps such as oaking, adding herbs, spices or whole fruit either in primary or secondary. It’s what you might call ‘guerilla-brewing’: get in, add something/take something out, get out’… and forget about it for a while. Happy brewing!

PawPaw, we were on a mission to learn how to make elderberry wine (we grow our own elderberries) when we discovered you and fell in love with your videos! Oh my goodness we just finished our first four batches...elderberry, grape-elderberry, apple-grape-elderberry (inspired by my signature jelly recipe!), and just a plain apple. Plain elderberry tastes similar to my favorite pinot noir, but our absolute favorite is grape-elderberry, which was a little sweeter. We tasted them yesterday, bottled up and started our next TEN BATCHES!! This time experimenting with some elderflowers in some. Will let you know how it goes...we'd love to share with you! ❤️

I'm a veteran. I learned how to follow instructions long ago. All anyone has to do is follow your instructions and they will make a perfect wine. I made the two containers of frozen grape concentrate and I loved it. I have another batch bubbling on my water heater now. I am going to try frozen apple concentrate next. If I want the same sweetness should I still use the full 3 1/2 cups of sugar or should I use less? Thank you for taking the time to make these videos I really appreciate it.

I think the grape is naturally sweeter than apple. I have steered away from the concentrate and gone to the two quart bottles. Making three gives you four (from the two cups you pour out of the first three).

Just made my first batch. I followed your instructions and set a reminder for one month and I will check it then. I'm wondering if in the process of the wine being created, will there be any sort if smell from the gases escaping the top of the bottle? Thank you, and I will hopefully update you with positive results in a month.

Hey PawPaw. Love your wine making videos. I have found that time is the best cook - I made some grape juice wine with your recipe and left it 4 weeks. Then I racked it into other bottles and left it for 2 more months. It turned our perfect, clear, and tastes a lot better than the ones I only waited 3 week. OK it is summer here so temps gets high.

I made a batch of wine with welches grape juice. I let it sit for a month ( I just wanted to make sure) then I took it out and tasted it, I loved it and I am not a wine drinker. I gave some to my son and he said " That's good...that's REAL good. Needles to say it did not last long. going to have to make some more. I just wanted to thank you for sharing you're recipe.
