I was just thinking...I'm so proud for ya'll. I remember when you painted the goat wall red and was milking one mama goat. I've watched ya'll build from videoing 7 days to 5. And now look at ya'll!!! both are able to be on the homestead full time. WQW it's really time to take a bow. I've watched with baited breath each new addition. Thank ya'll for being there. Ya'll are truly a blessing for many of us!

I blanch my zucchini in heavily salted water for just a minute or two, then dehydrate. They make good snacks that way, too. You don’t need to line your veggies up exactly, I just dump and “tousle” them so that they all pretty much have contact with the tray. Saves time. A lot of time, I’ll stir them lightly as they dry to be sure every piece gets dried evenly.

Simple zucchini recipe: thinly slice 10-12 small zucchini and reserve in a bowl. In a large sauté pan heat your choice of oil (olive is the best); covering pan’s surface to about 1/4 inch. In a separate bowl; add a1/4 cup of wine vinegar and two tablespoons of freshly rough cut mint. Sauté zucchini until golden brown. Remove from oil, let excess drip back into pan. Place zucchini in vinegar/mint bath and repeat procedure, building in layers. Great with pork, chicken and lamb.

I’m canning spaghetti sauce this morning inside!!! I cooked in crockpots overnight to keep the heat down in the kitchen. Yum A side note: don’t tip your jars as you take them out of the canner as it can break the seal. Obviously yours were ok from the popping. 😊

If you add one-two garlic cloves just split in half per jar in each of those pickle jars, it is super yummy. The sound of the jars sealing is your applause for a job well done. Makes me smile every time I hear that.

You could also grate the larger zucchini parts and dehydrate and use in zucchini bread pancakes etc

My wife love her Excalibur dehydrator. She processes all kinds of things in the dehydrator. A couple of years ago we purchased a 20 pound bag of Vidalia onions and she dehydrated them. That entire 20 pounds did not even fill up a quart jar. The garden in the greenhouse is looking great. You all should have an awesome harvest.

Dehydrators are great! Ours we use almost completely for Tomatoes as they are so good dried. Must preoat the grid so the tomatoes don't stick and pack them tight so that shrinked can be maximums

You can also use parchment paper so they don't stick and now they even make this teflon paper that you just wipe off and reuse. It's not really teflon but it is non stick!

Al, you are truly a morning person. The preserving wasn't too painful. Just having steaming outside makes a hugh difference. Not so much the discomfort of an overheated house. Well thank goodness for that! Pickles looked soooo good. The tuxedo cat was missing. On furlough this week? Happy 'lets avoid the grocery store'. Enjoy!

Looks like a couple of cattle for your beef supply may be a future project. That would help with keeping that back few acres of pasture in check. Sooner or later you will need to hire a ranch hand. .

First canning of the season...and dehydrating. The pickles look great. Al when you were picking the dill, it reminded me, a friends mom used to pickle beets and always put 1 sprig of dill in each jar. They were absolutely delicious. Sweet, tangy with a tiny hint of dill. mmm good. Y'all have a Blessed day.

I love that you are canning them outside. My father in law gave me a propane setup to do that and hopefully next year I'll have a big enough crop to do use it.

We never wiped the lids off, there's a possibility of lint on the rubber seal, we always kept them in water soaking. Used them wet, that was back in the day, though. Really miss canning,might do some pickles, but hard to find jars now! **Put a plastic tablecloth down, before you do your canning, so the vinegar doesn't get on your counter by accident?**

Whipperwill Holler has great canning recipes with help finding other good people with lots of experience in canning and preserving food. She keeps a bowl of vinegar and a lint free cloth(like cheese cloth) next to her jars as she is filling them. She wipes down the rims and outside of the jar and takes the lid out of hot water and puts it on the jar. Happy canning!

I also like old fashioned oilcloth table cloths. They last longer than sheet plastic. And they are prettier!

as for the herb garden i grow ours in a rock garden area, you got plenty of rocks... i used the larger once to shade the herbs from the wind and hot sun, but keeping it wet enough for the herbs to thrive...

I was dehydrating celery, peppers & carrots all Winter. It is amazing how they shrink. I'm going to make Mexican cucumber melon pickles this year. We have a bumper crop of them. Blessings to all.

My grandma canned everything my grandpa grew in the garden. Her pickles was placed in these 5+ gallon ceramic pots, she used rock weights to hold them down in the pickling solution. She made like 5 different types, she then canned them. You could always tell when she was doing pickles the beautiful smell was throughout the house.

Goood morning!!! I just got the 9 tray Excalibur and I’d love more videos on it. I think it will take some getting used to. My one from Walmart works faster but I heard for herbs you need to do it at a lower temp. 🤷🏼‍♀️ I love your videos. I’m one of those that won’t miss a morning and feel lost on Wednesday and Sunday morning. Like I’m lost. Lol

I helped my Grandma do all her canning on her kitchen wood stove. That's the only time I ever remember him working in the kitchen with her was canning season. It was so hot!

Turn your dried vegetables to flour in the processor, add to any loaf for added nutrition and or flavor, depending on the vegs of course. Make your own vanilla, vanilla beans and vodka. Vanilla comes in different strengths, called, "folds" an 8 fold vanilla is 8 times as strong as normal store bought vanilla. Buy vanilla beans, split scrape all those tiny, tiny seeds out and put the whole thing in the vodka, wait a couple of months and your home made is ready. Recipes are on the internet Way better than store bought. Don't just put the seeds, put the husk and all, IN what ever eatable alcohol you want. I've used brandy with good results.

Gina, re: veggies take zucchini,beets, onions, carrots, turnips, bell peppers, put into dehydrator as you normally would after dry put into processor and make your own veggie boullion

I keep a lot of chia seeds on hand and ground them for the glue. The dehydrator will slowly cook as it dehydrated anyway as they’re so thin. You can put them pretty close together as they shrink anyway

We dehydrate many things. Cut cherry tomatoes in half and dehydrate those. Use them in soup. Our Grandkids love apples dehydrated. Just core and slice them about 1/4 inch thick. Spritz with lemon juice on both sides (bananas the same) and they do not turn brown at all. Beautiful and crunchy apple and banana chips. So good. We do onions and peppers after they are chopped for onion and pepper flakes/chunks for soups and meatloaf too.

Hello from England! I have been using a de-hydrator for many years and the best advice I can offer is to make a solution of 1 pint water to 2 tablespoons of lemon juice or apple cider vinegar and dip the veg into it before processing (you can tip them in in batches but don't let them soak too long, plus keep using the same dipping solution, will work for a huge batch). It helps with the discolouration. Also works for apples. You have the veg spaced very far apart, they can be almost touching when you start as they will shrink quite quickly. When using the mandolin if you use the knife to quarter the courgette (you call them zucchini) for about 3 inches lengthwise at a time, then slice on the mandolin, it's a bit quicker. I use the same technique for dicing carrots. The mandolin must be very sharp for this to work. Hope the de-hydration is successful :)

I have a silicone pastry mat like that and find it really useful for kneading bread dough. Nothing sticks to it and loose flour easily washes off. I never knew how useful that mat is until I got it. Another useful tool is a dough scraper. 🙂

A brake bleeder can be used to seal jars of dehydrated foods. Heidi from Rain Country shows how that is done and for her it lasts longer than Food Savers do. Dehydrated foods take up less space so it's great for those with limited storage.

If you peel, slice thin and dry cucumbers, then run through food processed to powder , you can use in the winter to sprinkle on salads. It's concentrated , so doesn't take much to really perk things up.

Hi Al, if you put some gravel under the gate to raise the grade up you could remove the wood box and avoid the tripping hazard. I love your videos and watch them everyday. You family is great, keep it up.

Gina once your jars seal. You need to remove the ring before you store them and test them to make sure that they have sealed you can reuse your ring on something else but never store your canned stuff with the ring on it.

I mix up some lemon water to soak the veggies and fruit in for a few minutes before laying them out to dry. It helps keep their color.

I dehydrate cantaloupe. If you're ever wondering, it works really well. The results are a lot like your zucchini: it shrinks a lot. The flavor, though, is intense and sweet. A bonus for me is it's a favorite treat for my rabbits - you wouldn't believe how crazy they are for it.

The Dill Pickles looked beautiful! My mouth is watering now with the thought of that first taste. Thank you for taking the time to do this process step by step. Very educational with this, to preserve food for the table. The Dehydrater fascinates me. This is my 2nd experience seeing someone use 1. I use the whole dill stalk with flowers and stems-they give amazing flavor and smell too..also whole crushed garlic cloves even with the skin on...mustard seeds add some crunch as well as horseradish leaves..couple of all spice berries...yum !

Ms Bee I agree ; canned for years with my mom. We always used the heads, leaves and the stalks folded up “accordion - style” and stuffed in the jar. Garlic, for sure, mustard seeds, salt and a half bay leaf. We also made bread and butter pickles, sweet pickles prepared in a big crock before jarring up, pickled green beans, okra, and green tomatoes. We always had volunteer dill come up all over the garden, but of course planted much more. Lots of good memories. I’m a grandma in my 75th year.

I use dill seed, garlic, and a jalapeno pepper in mine. Sometimes even red pepper flakes too.

@@kathleenwarner8700 , My grandma made dill pickles in a huge crock that was in the cellar. Anyone going down to the cellar was supposed to give the pickles a good swirl. I don't know what she used for pickling or seasoning but the dill pickles were tasty. I was three or four years old at the time Now , I'm a great grandpa going to be 78 the day after election day.

Any canning directive book states NOT to use a metal knife to De-bubble. HOWEVER, Gina is so doggone gentle and thorough, I believe she would be the one exception to that rule❣️GREAT looking pickles, yuuuummmm! I love dehydrating foods though I don't have a machine anymore. I love using Alton Brown's method from 'Good Eats' where he uses a box fan, furnace filters, and dehydrator trays with bungee cords. Love that man.

Those are gonna be delicious pickles! My sister gave me the same recipe only she added a little garlic. If you keep your fingers off the liquid you can restock with more cukes, I did that and it worked good. I like the way the goats make a "follow the leader" line out to breakfast everyday!

Yes, back in the good old days, using the good old ways. It surely seemed more peaceful and simpler. When you went to the grocery store and only had 3 types of toothpaste to choose from - not an entire isle. Time was used for the things that were most important - like eating, keeping a roof over your head, staying warm in the winter, cool as possible in the summer, occasionally visiting and meeting with REAL friends and family... Oh Lord but I’m sounding REALLY old! LOL!!! Forgive me folks as I reside in a happier time and place even if it is only in my mind.🥰

A great dehydrated veggies is OKRA. You can save it to add to your gumbos or what have you, but if you shake some seasonings or just salt on them and store them in a jar, they are a super crunchy fun snack. Even kids will eat them.

Gina, since you do gluten free, I got this from a friend who was diabetic and tried to cook low carb. Pizza with Zucchini Crust... Slice zucchini lengthwise on a mandolin (If you have one). salt slices and sweat moisture out. Rinse and pat dry. Arrange on oiled pizza pan, drizzle lightly or spray with oil and roast in oven to further dry and lightly brown. This is your crust, remove from oven, add your toppings, back in oven 'til done.

Almost forgo, I've dehydrated sweet corn and it came out well. Blanched, cut off the cob, and packed a lot of corn into a quart jar for back up storage.

I have the same dehydrator, you can dehydrate pureed vegetables with seeds or small diced vegetables in them to make little crisps, they are a bit crumbly but very tasty as a garnish on a soup or other dish.

Busy couple of days. Dehydrated zucchini, canned homemade vegetables soup, pumpkin and squash. Replanted more tomatoes, broccoli and one more squash plant we love squash.

I don't know if you all do this up there, but here in the South, once we empty a pickle jar, boiled eggs immediately go in the brine and they make a great cold fridge snack!

I am glad to see all the hard work you guys have put in coming to light with your own home grocery store. Knowing where your food comes from is so inspiring. I live in a condo so its hard to put that into effect for me. Gtowing up we had meat birds and a huge garden to get our food from.

Unemployed Redneck Gardner is a great channel to follow on gardening and food. He has a great recipe on zucchini dehydration that he makes chips to snack on like potato chip. Also if you start getting too many remember you can slice them length wise and use them for lasagna noodles fresh or with a spiralizer for spaghetti.

Gina is so sweet and gentle with the goats; no wonder they love her. Buttercup acts like she doesn't want Ivy to nurse after being milked by Gina. Ivy certainly isn't as gentle, lol. ~ Loved watching the pickle making. Do you still have the second copper maran chick who used to share the pigs' feed? I didn't see her in the flock and she wasn't with the other one.

Gina, if you have extra pickling juice (My favorite is bread & butter) marinate the zucchini & summer squash in it before you dehydrate. YUMMY. I have not tried dill, yet so I can't say how that works out.
