Thank you so much for making these Uyghur food videos. I love Uyghur food! I almost cried when I saw these. This food is so soulful, so tasty, and full of memories. I was able to visit Kashi 10 years ago and to this day, the noodles and bread are favorites. Thank you so much for doing your channel! Also I really like Uyghur people. Made these noodles already two days in a row, because it worked so well😁 once for myself with your delicious sauce and one time with friends in an italian style, tomato sauce and cheese. Love Uighur food~~the reason for the water is because you want to have the water as hot as possible but at the same time not make the dough soggy and break the texture of the dough~~rooting for u guys~~keep up the great work~~

We say Serrano pepper in the United States so we use the Spanish word for it… at least here in Texas we do so… but they are usually the smaller ones

If it is hot it calls cayenne, if it's not hot it is long paprika.
Yea this one green paprika but you need to add for Uyghur noodle celery stalks and green beans, Chinese cabbage, white turnip thanks 😊 👍

In the video at the very beginning before you make the dough you say you have 130 mL of cold water. But then in the written recipe for the dough it only says 110 mL of water

I have very poor motor coordination and absolutely cannot follow what you are doing in the last section of making the noodles with wrapping it around your fingers that way. Is it possible to just pull the noodles as one long strand and then cut them into noodles before you boil them?
