Thanks Chef Zee I made this for my pastors 60 birthday party and he love it as well as the crowd.i put the patter down and walked away my nerves where so bad I was scared and within 6-7 min ppl cleaned the patter . I just made this and it was incredibly successful. The perfect Dominican taste. My mom and I grew up with hardboiled egg, raisins and olives in it so it was a bit different than yours but for my first time making it, it made all my nostalgia come back.

My mom and grandmother would put just a few raisins in when she added the green olives. Made it very good to get an occasional sweet in with the salty/savory meat. She also used this meat to make pastelitos. Anyone else remember doing this in their recipe?

My grandmother did the same thing especially with the pastelitos!!! I always picked out the raisins lol. Instead, i like to eat the raisins straight out of the box. Idk why I dont like them cooked 😅

It never did. I've had better results simmering over a low heat with a lid, IMHO. And way too salty. See my post of a moment ago.

Hey! Your videos are so good! I already cook most of these on my own but I have been incorporating some of what you do in my cooking which has enhanced it. I typically use Tomato Sauce in my recipes, but you use tomato paste which I guess is all about personal preference, but do you use it in order to manage the amount of liquid you are using? or does it have a better taste? I was just curious. I was taught by using the sauce so I'm apprehensive about using paste.

Hi Zee! I was wondering why when you’re cooking the meat, it doesn’t look like there’s so much oil. Do you drain it? Or do you cook it down til there’s none. I’m making mine now and there’s so much oil.

There’s a few things that I do. First things first, I opt for a ground beef blend that’s low in fat such as a 90/10. The most I’ll do is a 85/15 blend. The 85/15 blend is still a little oily for me so I use just tad bit of oil when cooking. About 1-2tbsp depending on how much meat I’m making. If the meat is still too oily, then yes, my last resort is to drain. Hope this helps!

I came across your channel today and I practically saw almost all of your videos and I am excited to trying your recipes since I am familiar withs Dominican & Cuban food. I wanted to ask you about two seasonings you keep mentioning in your recipes Adobo and Sazon which are very general terms when it comes to seasonings here. Hey!!! So happy that you found the channel :) For adobo I use the regular Goya Adobo with the red top. When I say Sazon when I'm referencing Sazon Goya lol. Whenever I use sazon on meats, I make sure to use the one with achiote and whenever I use sazon in rice, I'll use the one with azafran (saffron). Whenever I use sopita (chicken bouillion cubes) I prefer to use Knorr but Maggie-- which is easier to find is also good. For oregano, I almost always use Dominican Oregano because it has a slightly different and stronger taste to regular oregano ^_^ I hope this helps!

Hey You Oh my God thank you so much for responding so fast and yes I have the Goya adobo seasoning red top and I also have the Sazon Goya con Culantro Y Achiote. I wanted to doublecheck and make sure because like I said those words are very general here because there's so many seasoning products with those names in Latin markets. But the Goya is the more popular one. I hope you make a trip here to San Francisco one day, you love it. There is so much to see so many cultures so many cuisines here it will make your head spin. If you ever make it out here, I recommend you come during September and early October that's our summer here in San Francisco it's very beautiful and I will recommend so many places for you to go & restaurants thank you again.

Hola Chef Zee! I love this recipe and did this using 3 lbs of meat. My family liked it in empanadas, but said it was a little on the salty side for them. are you supposed yo cook it covered or uncovered mines came out rubbery lol the flavors were good but it didnt come out looking as delicious

Oh no! So Sorry it came out rubbery! Next time, add more water, keep smashing it down like you see me doing in the video, and let the water dry out. Add more water again keep doing this until it softens. Sometimes ground beef is stubborn and takes a little extra work to tenderize it. When you add water, smash it, and let it dry out you're braising the meat which softens it-- similar to when you make a stew. You can cook the meat covered or uncovered. When I have a stubborn carne molida that doesn't want to soften I'll cover it so that the water takes longer to dry out therefore softening the meat more. On average I'll do the add water, smash, dry out process about 2-3 times but when I have stubborn carne molida it may take me 3-4 times. Let me know if this helps! :)

It doesn't! You cook it down and it actually enhances the flavor!
