I like that you are so real. The kitchen is used, working and lived in.... equipment is on the counters and dishes are washed and drying near the sink. The towels have holes and the wipe rags are old t shirts. So relatable!

A much nicer idea than the one shown. It would bring out the natural sweetness of the tomatoes and peppers and reduce both acidity and the raw edge of the onions. But what the hell do you use the stuff for afterward? It doesn’t seem very appealing to me.

You make all the salsa verde you want to! I fry those beautiful green tomatoes! And if I want salsa or salsa verde, I can save a few for that as well. But being from the south, it’s a crime to allow a green tomato around an iron skillet without frying it. lol Loves me some fried green maters!

Just finished frying green tomatoes! Used milk flour and breadcrumbs and they were alright. Following week I fried them using buttermilk, flour and cornmeal. Wow, they were absolutely delicious. I love them.

Great use for green tomatoes! In Texas where I grew up, we grew tomatillos and jalapeño peppers for salsa verde. In my garden in Wisconsin, we made a green pasta sauce out of green tomatoes, bell peppers, fresh basil, onions, and fresh oregano. My tomato plants were always loaded with green tomatoes when the first frost killed my tomato and pepper plants!

I love your caring for your family and your health in the process. I used to do this for my family while my children were young and they are so healthy now as adults, almost never get sick and their immune system is great. How do you ferment green tomatoes? Is it the same as other fermeted veggies?. Also if you have to many fermented can they be water bathed canned after fermation has finishes (I know they would loose probiotic quality ) but hate to waste any food. Thanks for any help.

My mother would chop the green tomastoes, boil them with a vanilla pod, lemon juice and sugar and make a delicious green tomsto jam similar to fig perserves. It is a hit on any cheese board in winter!

My mom use to mack a moch strawberry jam and a pickle we called chow-chow in this area. Both very delicious and easy to do to help with the green boys. Also you can wash them and store them in a single layers, (not touching one another) and layered between newspaper to store while they slowly ripen for ripe tomatoes to use in salads in the early/mid winter.

recipe is above in the comments. Here is the instructions from The Ball Canning book for the Salsa Verde listed in the above comments. -In large stainless steel saucepan, combine tomatoes,peppers,onions,garlic and lime juice. Bring to a boil over medium-high heat, stirring constantly. Stir in cilantro,cumin,oregano,salt and black pepper. Reduce heat and boil gently, stirring frequently, for 5 mins. Remove from heat. - ladle hot salsa into hot jars, leaving 1/2 inch (1 cm) headspace. Wipe rim, center lid on jar. Screw band down until resistance is met, the increased saw to fingertip-tight. - place jars in canner, ensure they are completely covered with water, bring to a boil and process both 8-ounce(250ml) and pint(500ml) jars for 20 minutes: remove canner lid. Wait 5 minutes, then remove jars, cool and store.

This is one of the best recipes. I want to assure everyone that it also tastes wonderful without cilantro. In our family, I double the garlic and use the full amount of peppers (a mix of jalapenos (red and green). It makes a wonderful chicken enchilada casserole too. (My husband detests cilantro, he says it tastes like soap to him and I understand that is genetic with about 20% of the population.)

Put the salt on the garlic when you mince it, the salt collects all the garlic juices and makes it easier to get nice and fine.

So when I find like,a tomato or a bell pepper that's the flavor I love,i save the seeds and either freeze them for next season,or grow them.😊 Waste not want not is what my mama always told me.

I'm thinking that chopper looks cool too! And while I love mincing my garlic the good traditional way (trim, smash, peel and mince...) I found a lovely way to do the job quickly a while back -- *not* a garlic press -- it's like a little curved stainless steel rocker about 8" long. I try to restrain myself to what is truly useful and simple but I am fond of gadgets. To think that I got along with just a good chef's knife (still have it), a pot and cast iron pan, cutting board and a big wooden spoon. Got fancy a lot later with a paring knife and a Dutch oven. And then a real pepper mill, saute pan, another pot, more spoons when I turned 30. But I ramble...

@@lauriepollock4175 the chopper is nice but don't cut your pieces too thick before putting in the chopper - I've already broken 2 at the hinges because I think I put potatoes in there that were too thickly sliced. I'll probably end up buying a 3rd one, eventually, because onions tear me up when I hand chop them, but I will probably not use it on potatoes anymore.

Fried green tomatoes are delicious if you use the right green tomatoe. I use Aunt Ruby Green tomatoes, they r an heirloom and prolific, large and sweet. Yummy. Please try I think you will be surprised. Seeds available at Baker Creek or R.H. Shumways. I use egg/bread crumbs coating. Your garden is beautiful!😁😁

Buttermilk and hot sauce bath. Then welled coated with a mix of cornmeal, ap flour, 2 Tbsp cornstarch, 2tsp baking powder, salt, pepper and cayenne to taste. Let dry on rack for 20 min before frying. Same for most of my fryed vegs. Okra, squash, mushrooms, etc...

Catherine Colbert you can put them anywhere that’s cool and dark. A cupboard or pantry is fine if you don’t have a cellar. A basement is perfect too. I live in So. Cal, so I’m not fortunate to have either one of those. But I store mine like I said. They last a year or so.

you can always pickled green tomatoes and they are delicious . this is a recipe from the old country Palestine , you could either half the green tomatoes or leave them whole , squeeze as much as you can in a jar , add whatever suits your taste , peppers , garlic , black pepper berries , allspice berries , bay leaf , green hot peppers or red hot peppers , coriander seeds which is the same as cilantro seeds , turmeric powder , it is not necessary to use salt but if you like to that's no problem , in a different deep pot boil water and vinegar , one cup of vinegar for every 3 cups of water , put the jars in the sink and allow some hot water to run around the pickle jars this way they won't crack , then pour the boiling vinegar and water in the jars put the lids on ceiling them immediately , put them upside down on a tray for 2 weeks then a upright for another 4 weeks , bon appetit . this method of pickling can be use with just about whatever can be pickled ,cucumber, cauliflower , turnips ,beets , peppers green and red , the main thing to keep in mind is fresh clean vegetables as possible , one of the most delicious pickles are cauliflowers with the addition of turmeric powder to the pickle jar , cauliflower pickles will gain a yellow color , or couple of beats if you want the cauliflowers to have a burgundy color , make sure to dissolve the turmeric powder in the water and vinegar before you added to the jar . pickling is one of the ways that my ancestor sustains them self through the harsh Winters for millennials in the land of Palestine .

Here's what I do to slice food like that. A mandolin slicer followed by running them through a french fry slicer. I've seen them each for around $30, but I wouldn't cook without them any more. I use them primarily for hash browns, but watching you cut those tomatoes made me think of my method. Slicer is crazy fast and you drop about 6-10 slices in the french fry cutter at a time. Thanks for doing this recipe. It's going in my list.

Oh my gosh! Genius. I didn't really want to grow tomatillos and it was frustrating waiting around for the tomatoes to ripen and freezing until we had enough and canning small batches. This was the answer all along.

I have written down your instructions and tried to follow them. My salsa seems to be quite sour. Maybe I don’t have the ratios right. Exactly how many cups of tomatoes for a batch?

sound perfect . you can ripe tomatoes to cut the sour down but it will change the color

You need to look up a recipe for green tomato pie. OH MY GRACIOUS! My sister baked on years ago. We were all very hesitant in tasting it. But once we did we were looking for another pie. So very very good.

Most of us here in Canada would most often make green tomato mincemeat.. you know... for mincemeat tarts or pies at Christmas!! .. a better use than fried or verde in my opinion, but then, its CANADIAN, ...EH.?... BEST..CHERYL🇨🇦🇨🇦🇨🇦

I see you didn't peel the tomatoes like it says in the recipe, could you do the same with a red tomato salsa? First time canning salsa and don't want to do more steps than necessary. Thanks! Love your channel!

Cut your tomatos in half, and place the cut side down on a cookie sheet. Put them under the broiler to loosen the skins. They'll peel easy and no water needed to loosen the skins. Core them first though. Hope this helps.

I have left the tomato plants in the ground over winter. I just take away their supports and cages, and put plastic over them to keep them from freezing during the winter. I occasionally water them, too. The next spring, I uncover the plants and add supports. I end up with tomatoes early in the spring.

We raised tomitillos here a few years back they did real good. But havent done it in a year or so. We sold to the Mexican community back then.

Raw green tomatoes are poisonous. They must be cooked - frying or canning. Green heirloom tomatoes and tomatillos are O.K. because they are ripe.

@@Bra-a-ains raw green tomatoes are as "poisonous" as eating apple seeds. it'd take way more than you could ever eat to actually poison you - at most you'd get an upset stomach from eating quite a few tomatoes. As long as the tomato isn't fully solid and gross tasting it's fine to eat raw or cooked.

As you had to split it anyway for size, you could have added extra Peppers/Chillis to one of the batches to make an 'Adult' Heat batch, then the children could have the milder one? I'd have lost patience and grabbed the food processor for sure at that lot of chopping lol.

Casserole, with salsa verde,cooked & cut up chicken, cream of chicken soup,white corn tortillas, sour cream, white or yellow corn chips crushed, layer & bake 350° till bubbly ,good with salad & olives

@@paulamcclellan8413 Or, cook a pot roast (slow cooker) with a little bit (1/4 c) water until 3/4 done, then dump about 1" worth of green salsa around it and let the roast finish cooking in the salsa. Shred meat, if desired, and serve as open faced roast beef sandwich.

Hi Miss Sarah, enjoyed your video. Have a little trick for your ripening tomatoes and storage after the summer harvest. If you have room in a cool area rip out your plants and hang them upside down this will allow ripening on the vine at a slower rate. And in about a month they can still be picked off the vine. When all your tomatoes are picked put the left overs into the composter and get them ready for next year.

When I had lots of green tomatoes, I made a raspberry jam with them. You use 4 cups of green tomatoes blended, 4 cups of sugar , and bring it to a boil , then simmer for 1 hour . Than you add 2 packages of raspberry jello , simmer for 30 minutes . That’s it and can. Sooo yummy

I sterilize my jars in the oven. The way you cooked the green tomatoes is fine, because they continue to cook in the jar while cooling. I never use the canning pot ever. I find no need for it. It makes things complicated. I have a trick I got from my mother-in-law, the way she cans in Europe and it has never failed me. You might think it weird but it works. After filling all the jars, they are placed upside down, over night till completely cooled. And thats it. Each lid will be vacumed and ready for the pantry.

I have seen jelly done that way. I'm guessing that any item you could water bath would work fine that way. Curious though if your MIL substitutes preassure canning successfully?

I haven’t thought about it until now, but we love love love tomato gravy and biscuits. Green tomato gravy was a real treat growing up. I think next year I’ll Ill can some green tomatoes for gravy! Watching all these KZbin videos have me getting so industrious. I’m working on a cold frame now to start my plants.

My face fell when you said no fried green tomatoes!!! Dredge the slices of tomato in a mix of flour/salt/black pepper; fry in a tsp. of oil until browned on both sides then put mayo on white bread and a layer of fried green tomatoes -- they are heavenly tart and sooo wonderful. I love whole grain bread, but it is too flavorful for this sandwich.

Here in Transylvania we make pickled green tomaatoos..my favorite and my grandma she was use make jam from green tomatos too. God rest her in peace .. ..yummy sauce ..I will try make too this 😊thank you for sharing

Oh man... I forgot about pickled green tomatoes and onions. Grandpa used to take us to the fish fry on Saturday nights and there was always a jar on every table! Didn't care for it until I was an adult.

I have followed and love this channel! We cleared the tomato plants out yesterday & have a lot of green tomatoes! I grabbed my canning book to confirm I had all the ingredients. So excited until I read that the tomatoes also needed to be peeled. I didn't catch that you didn't peel them at first. I guess maybe I am used to seeing you peel tomatoes and missed it. I will peel mine to be safely canned according to our (yours & mine) favorite canning book.
