Thank you Leandro! I’ve been saying forever that just because you use gloves doesn’t make your hands cleaner. You just have to keep your hands clean and everything should be fine. A lot of people get a false sense of security using gloves. They can wipe their nose and scratch their ass with gloves on then make your sandwich with those same gloves and then it’s okay. But use your clean, bare hands and everyone loses their minds

IMO gloves look way more gross than just using hands. Also just doesn’t feel right or look natural. We’re making drinks here not performing surgery.

@@MrIrishpunk I understand that, but I was responding to the original comment saying that someone with gloves on can wipe their ass and then make your sandwich, which wouldn’t really happen if proper food safety protocols were followed. Gloves are switched out after every preparation, whereas someone making your sandwich without gloves could have scratched their ass an hour ago, forgot to wash their hands, and would be prepping your sandwich. I’d rather go with the low-probability false sense of security that gloves give than a more likely case of disgusting that not wearing gloves does. I’ve been bartending for twenty years. While my hands are usually clean from all the solvents and cleaning fluid from washing glasses, there are times where I’m touching dusty old bottles, kegs that have sat in some warehouse touched by god knows what, used napkins, food, and people’s used glasses… If I threw on a new pair of gloves between each drink I made, your drink would be 1000x safer to drink than if I didn’t.

Also, certain food just can't be prepared properly while wearing gloves. Try making sushi wearing gloves...just doesn't work

as a doctor I agree with you. I prefer food prep without gloves as people tend to be much more free with touching nastiness if they have gloves on and they don't wash or change the gloves after like they would with their hands

As a health inspector, I’ll take a clean hand over a dirty glove any day. Folks with gloves on eventually start to think/act like the gloves are there to protect them, not the food.

Aperol and Campari are too different. Aperol is sweeter, with more of a grapefruit bitterness, whereas Campari is more bitter, but in an herbal way. They’re not really interchangeable. However, if you did want to make this, and all you had on hand was Campari, I would dial back the Campari significantly; like down to a bar spoon.

Spot-on about gloves. Gloves are supposed to be single use. If you literally touch anything possibly contaminated? Re-glove. My wife (a surgeon) bitches about the misuse of gloves all the time. Some germs are good for us, anyway, gotta keep the immune system exercised.

Hi, i bought xanthan gum powder because one of your recipes, but i feel like i dont understand the purpose of it 😅it instently turns to a gum in liquid (i imagine thats the intenfer purpose). Should i have bought something else? Even blending, it stays gummy. I can only use it with a shaker/ strainer so that it doesnt hit the drink.

You’re using too much of it if it gets gummy. With xantham gum, a little goes a long way. A quarter teaspoon or less in a blender full of liquid (and, yes, you want to blend, not shake) is more than enough to emulsify and stabilize whatever you want to emulsify or stabilize

Tropical drinks are made for the winter! Tiki in particular, with its references to the South Pacific abound, is made for Americans who are as far from Polynesia as possible, Ohio in the middle of winter.

Just want to preface this with the fact that this comment is pure speculation based on limited available information. I got a bit of an uncomfortable feeling with how you responded to your crew helper in this video. Again, just based on a couple very very short interactions, but the feeling was enough that I just wanted to leave a comment. The way you quickly responded with what sounded like frustration when he talked about using your bare hands was offputting to me. It was like you were annoyed he even brought it up, instead of being a little more lighthearted and respectful with something like “that’s a common belief, but in reality wearing gloves is no different than just using your hands if you wash them often.” Then there was the coughing, which you didn’t seem annoyed by but didn’t seem like you were having fun either. I think if I were making a video with friends I would at least cracked a smile at that, being a harmless interruption. I know that these tiny glances behind the scenes don’t tell the whole story, and I know doing this for so many years and it being a job can lead to less enjoyment of parts of the process itself, and I even know that people can just have off days where they aren’t totally feeling it. But I would be a bit disappointed if this was the attitude you consistently treat the people who work with you to. These short clips paint a bit of a dismissive and annoyed picture, which is so different to the pleasant but instructive picture the rest of the video paints. If this assessment doesn’t reflect reality (which is more than likely), please ignore it, but I give it to you as something to think about or reflect upon. Thanks for the great content!
