I remember watching this one when I first discovered your channel. I’ve been to that creek many times. Olive oil seems like a good addition. If I was making this on the first day of a backpacking trip, I think I might opt for pancetta and fresh ground black pepper. Trader Joe’s has an Italian four cheese blend my family and I have been into lately. They also have a nice chicken Italian sausage that if frozen would transport quite well on a cooler month hike. Keep on cooking 🧑🍳

cheers! If I was making a classic Carb, I would absolutely use guanciale but the bacon is a great outdoor hack to get the close flavor

Another way to make this meal even faster is to use some Barilla Ready Pasta. In Walmart you can only get it in penne and rotini, but it works just fine. I prefer the rotini. Just add some water, toss in the pasta to heat up, then add the rest. You can get it done in like 2-3 minutes! And thanks, Chef, for all that you've done to bring great recipes to us all. I'd still love to collab sometime!

Yum. So deciddd to rehydrate my eggs first w pepper and garlic powder . Then. I added them back at the end . This kept them from making my pasta slimy . Also loved using precooked bacon for this recipe .

@ 1- I saved the rehhdrsted eggs in a tiny piece of foil. Added them back at the end , and they weren’t cold . 2- fave lightweight backpacking skillet ? Ever used a pie tin ?? Im reaching here …….

@ I don't pack a skillet often, but jetboil has nice one that is nonstick. Haven't tried the pie tin. I'm sure it would work but it would get pretty sticky/messy

Thanks for the recipe Chef! I'm going to try with ramen noodles (no ramen seasoning packet) and experiment with couscous. The couscous mainly because I like the name couscous carbonara. lol
