amazing recipe, did it without skewers just on an over rack works fine. Tastes better than the shop made and I can control how much or little meat I want and also sauces. Thank you! finish off in a pan to get bread crispy!

Backstory: the best place in Philly to get a lamb salad in 2013 was outside of a tiny post office in Center City. You could only get it on Tuesdays and Thursdays because that's when the real cook was working the cart. I didn't know it was called Döner. This recipe and technique makes Döner that recalls the best halal cart lamb salad I've ever had and it made work from home lunches something to look forward to. You should make this. (It even works with 50/50 Bison/Lamb.)

I am planning to make this sometime. But I wanted to ask: How many grams each of the ingredients do I need to use for making this doner kebab as it doesn’t say. What temperature do I need to put the oven on to cook it at please? Would someone mind posting a list of quantity and grams of the ingredients and the temperature of the oven please? If someone can do that, that would be a massive appreciation. Thanks

Turkish döner kebab was and is still originally layers of meat layered and layered on each other mince meat is done as well. But the layering method Greeks arabs do now is a Turkish method.

You can also shape the meat into a log and put in the freezer for a couple of hours until it's fairly hard, slice it thinly (with a large, sharp knife) and cook straight away in the pan with some butter or oil. I've used your shawarma recipe to make chicken wings many times and it's delicious 😋 I didn't realise you had a KZbin channel. Just subscribed.
@RivieraKid694 жыл бұрын
Do you mean bypassing the oven completely? If so, that seems even easier.
@davidmaynard24083 жыл бұрын
My western taste buds tell me this would be very tasty. That said, decades ago we hosted an AFS student from Turkey and we've visited Turkey and Lebanon (when they weren’t blowing each other up). From experience I can assure you no outwardly practicing Muslim will intentionally put "the pig" in his mouth, stomach or in a public recipe. Just as practicing Kosher Jews won't consume “the pig”. But many are like our southern Baptists and Mormons that outwardly denounce drinking alcohol, yet one would be amazed at what can be found in their car's trunk.

You'd probably have to add a lot more fat. Maybe try adding a bunch of duck fat to it so it will bind properly, though not sure about the proportions.

I didn't know it could be DIY. Thank you for such thorough explanation video and in your blog. On side note (some may remember places I'll mention...) The best doner I ever had was in Burlington, Ontario decades ago. Then the business closed and the second that came close to taste (smaller size) in a mall in Hamilton, Ontario, until the mall was demolished. That was so long ago....that I swore off meat for good. Backed then, I would drive looong way just to have a taste. I haven't have any for many, many years, because there weren't/aren't any places that I knew of, that offers these. So, your recipe makes me feel extra happy because it looks/sounds so good that I might just make it. If not for me, then for carnivorous family 🙂

Looks great and yummy. One note though, döner is a Turkish word which means rotating or turning. Döner is a Turkish and Arab speciality, and they do not use bacon, originlly they use cow or sheep fat, I think you used bacon because this is what is available around you

I've just finished eating my first Kebab based on this recipe/method, and it was one of the most unpleasant meals I've ever eaten. I'm going to throw the rest of it away! I bought two packets of 1kg mince, and I used one to make the Kebab meat. Now ... I'm going to make a Lasagne with the other packet! I'm going back to my local Kebab house!

Where’s the temperature for the oven part? A whole lot of detail on your website yet you fail to mention one of the most important things. Maybe less crap about origins of kebabs and more detail on cooking it.

Doner mystery meat? That's an unfortunate name, I wonder who came up with that? Ever heard of what happened in Donner Pass in the USA mid 1800's? It totally makes me think of this! lol ;)

Absolutely do not run the meat in the processor, it will turn the ruin the texture into sausage. Döner supposed to have a steaky texture not like meat loaf.
