Hi Donna. I was in the middle of making rolls in the bread machine and I had a lot of questions and doubts. I found your video and you assuaged all of my fears! It was really helpful watching you shape the rolls and seeing how you placed the dough balls in the pan. I followed your tips in freezing the remaining balls in the freezer (I froze in a pan and then transferred them to a ziplock bag) and baked a couple weeks later. This worked out GREAT and I will definitely do this in the future. Next time I will try your recipe (mine was 3 c. flour, etc). Thanks so much!

King Arthur recommends weighting the flour. Their bread flour will weight 120grams for a cup of flour. Dipping into the flour results in using more flour than a recipe calls for...resulting in the dough be "hard" and having to add water hoping you don't use too much.

Yes, they do. You'll also find that humidity levels will affect the weight of your flour. A digital kitchen scale can be a big help in the kitchen. With experience, a home cook can learn to adjust the dough. Thanks for your comment.

Thank you so much. I'm thinking about buying a bread maker because i want to make safe, homemade, rolls for my daughter who can't have store/bakery rolls because of nut allergies & cross contamination during manufacturing. I'm not a baker & I have never used a breadmaker before and this may sound like a dumb question.... When you set it on the Dough Cycle, it took an hour and a half. Does the machine knead the dough for a certain amount of time, and then automatedly stop on its own, to allow the dough to rise? Is most of the hour and a half time just the time needed for the bread to rise? Thank You so much!🤗

When you use the dough cycle, your machine will mix the ingredients, knead the dough, and rise the dough one time. Then, when you take the dough out of the machine to form it into whatever you are making (loaf of bread, rolls, focaccia...) you will let it rise one more time in the pan you are using until double in size-most of the time.Then you'll bake it. I usually allow about 3 hours in total, start to my finished baked bread. You CAN let the bread machine do all of it start to finish, but I prefer my bread products shaped by me. It really is very easy to make bread in a bread machine and you have a perfect reason to try it. You'll be an expert in no time. Read the manual for whatever machine you decide to buy carefully because some do vary in how to use them.

I first weigh the total dough ball and then divide by the number of rolls I will be making. The number can fluctuate based on measurement differences and humidity in the air.

No. Hawaiian rolls typically include eggs, sugar, and milk. This recipe has a little sugar but no eggs or milk.

My dough setting raises twice, 10 minutes then 40 minutes. Should I take it out after the first rise and manually do the second or is 40 okay, then shape and manually rise? Lol I hope you understand what I’m asking. Thank you.

It's complicated. Generally it is recommended that you substitute 50% whole wheat with 50% other flour. I have done this with whole wheat and all purpose flour in the past. The reason for this is that whole wheat flour is a very dense, high protein flour.
