Donut or Doughnut...?

Today's menu is 'Custard Donut'.
I got triggered when I found out that donut I bought contained like 1% custard.
That's why I decided to make some myself so that I can stuff as much custard as I want.
Making donuts at home can be time consuming but it'll worth it at the end.
Ingredients:
Egg: 2+4
Butter: 20g+40g
Milk: 160mL + 400mL
Vegetable Oil: 500mL
Flour: 400g
Salt: 2 tsp
Sugar: 4 Tbsp + 4 Tbsp
Yeast: 2 tsp
Corn Starch: 20g
Vanilla Extract: 1 tsp

putting hot things quickly into an egg mixture makes the eggs cook (as you can see at 1:24, there's a bit of cooked egg in the bowl) and this can cause the mixture to have egg chunks inside. this can be avoided by pouring the hot mixture in SLOWLY while whisking. after you put in about 1/3, you can speed up and pour the rest, and you won't have any clumps.

Yes, tempering the mixture properly is a great tip when making custards/pastry cream. 😇

In my country we call this "sonho" (dream). We usually fill the dough with dulce de leche, chocolate ganache or this dutch custard. It's heaven! You simply can't stop eating LOL

In Germany they are often called Berliner, except in Berlin where its Pfannkuchen (pancakes). My favorite are the classic ones with strawberry jam 🤤

​@@lavenderiris9744 In a pinch, you might be able to use a plastic sandwich bag instead, since you don't really need the nozzle for this kind of thing anyways. Just make sure what you're putting into it isn't remotely warm, because you don't want it melting/leaching into your food. If the concern is about wasting plastic, then reusable piping bags are a thing! They're expensive and hard to find (not to mention clean) but they do exist. I hope you find something that works, good luck!

The custard actually serves an important purpose in a traditional American doughnut. The dough for that will either burn on the outside or be uncooked in the center if you cook most of it properly. You put the custard in (or punch out the middle with a machine) so that it can't burn.
