I was visiting my parents last weekend in Edmonton and I surprised my dad by making this recipe. He is the pączki expert in our family and he said they were the best he ever tasted! Wow this video is nearly 7 years old and I only just discovered you Ania. I can honestly say the best cook I have ever seen on KZbin. One suggestion Ania ... I wish you cut the Donut in 1/2 at the end to show us the Jam inside after deep frying. Sorry it took me 7 years to subscribe :)

OMG, pączki !! I remember, my grandfather, a bucket between legs, to beat, beat and beat again the dough with hands - not Kitchenaid at the time... ;) - in general for Christmas, then we were numerous ! And one shot for the bucket, two shots for dziadunio :)) During this time there, mom, my sister and me heated oil and “tasted” jams of babcia.

tez mi sie czasem zdarza, ze nie wyrosnie. przyczyny moga byc rozne, dla przykladu: drozdze stare (nie pachna wtedy drozdzami po dodaniu do mleka) mleko za gorace mleko zimne niska temperatura w domu albo otwarte okno Ja jak widze ze po godzinie mi nie drgnelo to wlaczam piekarnik na minutke zeby sie cieplutko w nim zrobilo i potem wstawiam ciasto do wylaczonego juz i jezeli byl problem z temperatura w domu lub przeciagiem to juz problemu wiecej nie ma. Mam nadzieje, ze sie nastepnym razem uda!

Hi Anna... These remind me of the "ponski" my Babcia used to buy for us from the Polish deli (In Brisbane, Australia). I tried to make these last night. The recipe seemed simple and actually is (love the vodka touch!)... however I had a lot of trouble sealing the dough, once the jam was spooned onto the mould. They dough would not stick together, leaving the jam to ooze out, especially once placed in the oil. They basically unfolded and the jam spilled into the oil. Is there a trick or technique to sealing the dough? Perhaps a touch of water? The few that did work, tasted just like I recall, but many were opened and had no jam and the jam fell into the oil. Any advice would be very helpful. My friends all loved them... but (only) I knew that they were not as they should be.... Thanks again. Love your recipe and delivery. very easy to follow.

Richard Macionis if they did not want to seal it means the dough was not humid enough! It needed 1 or 2 tbs of liquid more! The jam needs to be hard as well! I hope it will work for you next time!

Looks amazing! what type of oil did you use for frying? also, if i wish to glaze them instead using of icing sugar, do I add on the sugar before frying?

I usually use sunflower oil for frying, any oil which can take high temperatures, is flavourless and is not extremely expensive will be fine :) if you want to glaze them, you need to do it after you fry them... Actually traditional way is to use lard for frying. It sounds unhealthy but in fact the dough absorbes less fat that way, is fluffier and lighter. Such a small paradox.

I'm sure you could also make the same dough recipe without any filling, jut put the dough in the oil flat, it will puff up, then after they cool, you could then pump it with your own desired filling.

You can put the marmalade in after frying them too. You can use a piping bag with or without tip - take a sharp knife and insert it into the side and squeeze the filling in.
