Isn't it said that Galactus appears as whatever species he is attacking? For example: he attacks Skrulls, he looks like a Skrull, when he attacks humans, he looks like a human. Perhaps the reason he looks like a hulk is because he is in fact attacking a hulk. I could be wrong though but I could have sworn Galactus had some sort of rule like that.

If you look at Bannerincrediblehulk channel he shows that there are issues where thor was not holding back and still had issues with hulk. So Beta Ray Bill's assessment of Thor is not quite accurate. I know it is up to the writer who would win a battle between these two characters. But it was just odd that they were saying Thor has always held back when there is evidence that he always has not and has still lost at some times.

That line early in the video that Bruce tells Betsy that the Hulk is immortal, but Bruce isn’t reminds me of the comic book The Hulk: The End we’re very old. Bruce Banner is the only man left alive because the Hulk killed everything at the end of the book has a heart attack and dies only leaving the Hulk persona. The Hulk sits there and thinks that the Hulk is the strongest one there is… the Hulk is the only one there is… the Hulk is… cold. I wonder if they put that line in this book as a wink to the end.

Because you have different authors and different storylines, each hulk series is tied to one author is its own story, only vaguely related to hulk. There's no real continuity. I'm not immortal, the hulk is immortal contradicts the entire previous series. This is why people are leaving comics

Remember this was just Thor’s strength and rage. Not his other powers or, like Odin said, using the powers of Mjolnir that he seldom if ever uses. So physically Thor is hulks superior, and power wise, there is no comparison. Remember hulk is the immortal hulk and possessed by the Titan which is some magical being, but it is NOT hulk.
