I'm originally from Georgia but moved to south Florida when I was very young so I grew up around a melting pot of amazing ethnic foods. Haitian dishes are one of my favorites. After moving back to GA, Haitian restaurants are non-existent so when I crave Griot, Legume, and rice & beans I search to learn. This recipe came out soooo good! I'm getting better each time I make it. Reminds me of my 2nd home!

@@Fabulousaddy Yes, I'm aware of the Haitian restaurants in the Atlanta area bcuz I lived there for 10 years. I've since moved to another part of GA that do not have them. The only time I have access to these restaurants is when I visit Atlanta which is not too often. 😔

This is the National dish of Haiti that was used during the Independence celebration day and was propagated throughout the Caribbean islands and the south of the USA 🇺🇸. Looks good ! Use fresh spices all the way without Magi. Using the Red kidney beans or the black beans do have a meaning to it. Red kidney beans is great to eat with poultry and some meat, the black ones with Seafood. Salted fish or pork

@@dorannette26 😁hi Annette-do you add the green pepper finely minced, scallions and shallots? You could let the cloves boil in the water they will surface on top of the rice. Uncle bean rice, jasmine rice and basmati rice, niki rice are just great for this dish. Don’t forget to drop a fresh habanera pepper and a little bush of fresh thyme when the water boils just don’t let the pepper burst. You only want the flavor. Do you know how to cook cashew nuts with rice and cream of coconut. For this one it is a palatable dish with shrimp, lobster and crabmeat cooked with white wine vinegar and fresh tomatoes 🍅 on the vine with a side dish of fried green and sweet plantains garnished with a few slices lettuce and tomatoes and avocado 🥑. And for a drink a choice of coconut water with a little bit of white rum and lime. God bless!

My Dutch pots were purchased in Haiti. My stainless steel pots, are from Marshalls and Burlington. My mom gave me the one I used to cook the rice (someone gave it to her, not sure where they bought it from).

It would be nice if you stake the clove on the hot pepper, and let the coconut cook little bit more, that’s my opinion.

First of all , I mentioned if you want you can put the cloves on a bell pepper or a piece of onion. Second of all, I do no have a problem with cloves in my food!!!! Lastly, I cooked the coconut milk but for the sake of the video not being too long , I cut the video short! It is called editing!! Thanks anyway for commenting!

No, I stop using my pilon years ago. I use my food processor to mince my garlic to save time.

Yes, of course! My late Mum crushed the garlic and scallions together in the* “Pilon!” with precision (*that’s “mortar and pestle “ for English speakers)! Oh the memories of her fine cooking!

What brand of parboiled rice do you use? I’ve tried a few brands and they all have a very distinct flavor which overpowers the flavors in this dish.

I use Ti Machan’n premium rice, make sure you wash it 4 to 5 times. It won’t have that distinct taste you talking about.
